I am a mum of two who loves food, shopping, walking, painting and visiting new places. Oh and I love a glass of wine, preferably whilst sat in the sun. :)

Why did I get into Nutritional Therapy? For a long time I have put a lot of pressure on myself, I spent my college and university days partying and leading a hectic lifestyle, which often led to eating in a hurry, everything was fast! I worked for the police and within the civil service for a number of years working hard but spent the rest of my life being very busy. This was followed by periods of emotional stress and growing a family, of which I do feel very lucky and blessed to have two happy and healthy children. However, I also experienced a difficult time coping with my son's erratic behaviour which was impacting both the family and his life at school. This eventually led to burn out. I decided that I needed to make some changes, and become the best version of myself that I could be. I wanted to have more energy, to think more clearly, and to be fit, healthy and be a positive role model for my children. This led to me searching for something that could provide all of these things. I found this in studying naturopathic nutrition with the Nutritional Healing Foundation and began my journey of personal development learning about some of the fantastic techniques and methods that can reverse lifestyle disease. I experienced first hand the positive impact that this has had on my son by changing some food choices and habits which have had a noticeable impact on his behaviour. This has not only brought harmony back into my life but of my family too. I now feel privileged to be able to share this knowledge and help others find a healthy balance. How have I helped my Clients? Since qualifying as a Nutritional Therapist I have helped people with a variety of imbalances within the body, from arthritis pain, vitamin deficiency, depression and anxiety and much more. My Philosophy

I am passionate about health, nutrition, and supporting people to find a sustainable way of eating that helps them to find a happy balance that works best for them. The nutritional therapy approach embraces a holistic view of health and healing, using a wide range of tools to assess and identify potential nutritional imbalances and understand how these may contribute to an individual’s symptoms and health concerns. Speedy Ramen noodle broth. This was spicey but nutritious. The broth had a miso soup base in a mushroom, onion, ginger and garlic broth. The aubergines are grilled and covered with a miso, soy sauce and white rice vinegar paste.

veggie filo pastry pie. Fairly straight forward to make with loads of taste and goodness. Roasted butternut squash, garlic and red onions 🌰 mixed with cous cous, chick peas roasted red peppers feta and ras el hout and seasoning ( mint, Rosemary) with a red sauce ( lemon peel, cinnamon two tins of tomato and rose harrissa) and a dollop of rose Harrissa in natural yogurt.. πŸ˜‹ its a win from me x

1.used up Basmatic rice with caramelised onion, vegetarian chorizo sausages broccoli and a little grated cheese under the grill. ( all cooked on hob. Make sure your rice is pipping hot if re cooking and add a little water to the pan to stop it sticking)

4. Chocolate hazelnut tray bake ( I added coconut peices, melted dark chocolate 🍫, a dollop of Biscoff spread and a dash of vanilla to give it a bit of taste to my normal chocolate tray bake)

These colder nights are starting to make me seek warmth and comfort in food. Okay they may involve lots of cheese and sugar but you can always swap the heavier options for lighter versions. πŸ˜‰

Goji Berry

I made a really easy recipe at the weekend which included goji berry's. I am not using my own grown yet as you will see on photo 2 that i have not yet reached the fruit stage of my plant but I am hopeful this summer. 🀞I then hope to dry them out as shown in photo 2.

Goji berry's are a rich antioxidant which have a long history going back thousands of years, particulary in rural China, Tibet and Mongolia as a miracle fruit, and often used in Chinese medicine.

Packed with a variety of amino acids, vits, minerals and antioxidants. You can add some to your porridge or favourite cereal. They are lovely in flapjacks, biscuits but of course In bread.

The recipe that I followed was from the cookbook and was a goji berry loaf including dried apricots and quite a few large dollops of good honey. They day after this loaf was lovely toasted with some homemade jam πŸ˜‹.
480g of spelt flour
1tsp of bicarbonate
1 tsp of baking powder
1 tsp of sea salt
80g of pumpkin seeds or your favourite seed
40g of dried apricots chopped . You can also use raisins
40g goji berry
2-3 dollops of honey 🍯 yo your taste.
520ml of tepid water

Really easy you just combine all of the dried ingredients into one bowl then mix in the honey and water. Pour into a prepared loaf tin and bake at 180c fan for about 50 minutes. Then take out if tin and cook for a further 10mins and upside down to provide a better crust.

Easter is for eating right.. ( although in our house DIY was also on the list πŸ™‚) I did quite a bit of cooking although here is just a few of the dishes over the Easter weekend.

The first was a lovely tikka masala with cauliflower and panneer cheese with lots of seasonings such as saffron, cloves, cinnamon stick, cardamon pods ( crushed so just use the seeds) garlic, onion, ginger, sun dried tomato paste. You could replace the cauliflower with chickpeas which would work just aswell.

The sauce uses a cashew base so I needed to soak 60g of unsalted cashew with a pinch of saffron and 1 large tablespoon of mango chutney in 700ml of boiled water. Whilst grilling the cauliflower and cheese which I'd mixed with the sauce ( yogurt, paprika, sea salt and lemon zest) leave until gnarly.

Blend the cashew mixture and pop in a deep pan with all the other seasonings on a low hear and once the cauliflower and cheese is cooked pop it in.

The second dish is a 5 a day spaghetti bolognese. Basically use leftover vegetables , or lentils and mix with tomatoes or tin, sun dried paste and at the end add a good splash of tamari sauce and balsamic and season. Easy... you could also add some meat to this aswell. It had a rich tomato taste.

Tried the recipe Keema Aloo, which is a new recipe from . This uses vegan mince which can be a bit bland but this is definitely a jazzed up veggie curry and a surprise hit with the children. I think the stack load of new potatoes helped and they loved the wholemeal chapatis. Check out the recipe on bosh.tv for a healthy mid week meal. If you wanted to add meat I think this would potentially work well with prawns.

This year has been less about the chocolates and sweets and more about the eating of real wholesome food. I try to do a different vegetarian dish each year, mainly because I am the only one in our family who eats it during Christmas and plus I enjoy trying something different.

This year was an old recipe that I found for a mushroom, leek and spinach Wellington with chestnut 🌰 and goats cheese. I also popped in some leftover pak choi which went well. This was a fairly simple process to make. The recipe did not include seasoning however it could do with a pinch This was really nice with a roast dinner and grandma's spiced red cabbage πŸ˜‹
