β£οΈ As promised, Here's my slight twist on a classic Kedgeree, which I LOVE!! Packed full of protein, fats and natural fibre β£οΈ
πΏ I've made it more nutrient dense by swapping the classic smoked haddock for salmon (high in omega-3s), adding more veggies, and more spices πΏ
β¨ The secret to this dish is frying the onions and leeks reeeaal slow to release all those juices until nice and sticky. Also using lots of grass-fed butter in the cooking process adds so much flavour! β¨
β³ If you're rubbish at timings you can cook the rice, salmon and eggs in advance - which makes it super quick and easy β³
πΎ I use wholegrain rice to make it even more nourishing. I've added courgettes and mushrooms, but you could literally chuck in whatever veggies you like π₯¦π₯
