SUMMMER SOLSTICE - WHY THIS IS THE TIME OF YEAR FOR A RESTORATIVE SEASONAL CLEANSE

Whether you love it or hate it (my Mum phones me every year and weeps as the day marks the return to short days) Summer Solstice is upon us.

As someone who suffers from SAD (I would happily just hibernate over the course of winter) this is a bitter sweet time for me & so dear friends, I embrace it as a time to nourish & support my body, take up new things (I’m slightly obsessed with house plants at the mo) & enjoy the early mornings whilst I still can.

Sometimes it is really hard to find the time to exercise but I know if I want to be the best version of myself I need to move!

These days I’ve stopped beating myself up if I can’t train 1hr+ daily & instead I make sure I move everyday be that yoga, going out for a run, stretching or functional movement and strength.

If you are struggling to find the opportunity to exercise, try changing your mindset & think about how you can move more then grasp the opportunity whenever you can!

Out of the box meal ideas!

Spaghetti squash with pesto, mushrooms & kale.

A farewell supper for this member of the squash family as it’s the end of the season but I’ve been to wanting to roast one of these beauties for a long time so when it appeared in my organic veg box selection I was chuffed to bits.

Cut in half, roast for 35 minutes in the oven and scrape out the flesh which really is like spaghetti. Sauté garlic, mushrooms, kale. Toss everything together @ serve with a dollop of pesto for the perfect light seasonal supper.

Market towns & superfood latte’s.

After a morning sitting in front of my screen, an afternoon out in the cold, crisp winter air with a steaming cup of beetroot-cacao latte (turmeric for the hubby) helped to clear my head.

Beetroot is a source of nitrates, a great source of fibre, folate (vitamin B9), manganese, potassium, iron, and vitamin C.

Beetroots have been particularly associated with improved blood flow which can help to improve circulation throughout the winter months.

Breakfast in our household these days is looking a bit like something out of Goldilocks & the three bears. The first person up in the morning fills a large pan with rolled oats, leaving them to soak while we all wake up & eventually get dressed. Once cooked into a creamy porridge we add our favour toppings.

This morning was a great example. Baby bear had ground linseed, PB that we personally ground at the plastic free shop yesterday, strawberries 🍓 & apple purée made from the wind blown apples 🍎 in her Grandpa’s garden. Mummy bears was boosted with vegan protein & grated courgette for an added twist. Daddy bear had his a little later & definitely had extra berries & I think I even saw some pineapple sneaked in!

So the we have it. The three bears with a nutritional twist! No golden syrup but naturally sweetened with apple purée, linseed for our omega 3’s, berries for their polyphenol content, apple purée for its gut supporting pectin & oats rich in b-vitamins, soothing to the tummy, high fibre & great for all the family.
