✨ The Everything Chicken Soup Recipe ✨
Because it really does cover all the bases. Nourishing your skin, soothing your gut, boosting immunity, and packing in protein, healthy fats, and vitamins A + C. All tied together with the richness of homemade bone broth and a drizzle of golden olive oil. 🍋🥕🍗🥔

Ingredients (serves 4–6):
• 4 organic chicken thighs (bone-in, skin on to start)
• 1 large onion, diced
• 2 carrots, sliced
• 2 celery sticks, sliced
• 2 medium white potatoes, diced
• 1 medium sweet potato, diced
• 4 garlic cloves, minced
• 1 × 400g tin red kidney beans, drained and rinsed
• 2 large handfuls kale, roughly chopped
• Zest + juice of 1 lemon
• 2 litres water
• 1-2 tsp sea salt (to taste)
• ½ tsp black pepper
• 1 tsp dried herbs (basil, oregano, or mixed)
• Olive oil, for drizzling

Method:
1. Heat a large pot, add chicken thighs skin-side down, and fry until the skin is golden. Remove chicken, peel off the skin, and set chicken aside.
2. In the same pot, sauté onion, carrot, celery, and garlic for 5 minutes until softened, using the chicken fat for flavour.
3. Add white potato, sweet potato, chicken thighs (without skin), lemon zest, juice, water, salt, pepper, and dried herbs.
4. Bring to the boil, then reduce heat and simmer gently for 35 minutes.
5. Add kidney beans and kale, and simmer for a further 10 minutes.
6. Remove chicken, shred the meat, and return it to the pot.
7. Taste, adjust seasoning, and finish with a drizzle of olive oil before serving.

🍲In the cooler months, we can become more quietly dehydrated than in the summer. Because we don’t feel hot or sweaty, our thirst signals often stay quiet. Thirst is one often the last signals of dehydration.

Proper hydration in autumn and winter supports everything from hormone balance to your immune barriers, energy, circulation, skin, etc!

How can you hydrate more effectively when it’s cold outside?
✨ Soups, stews & broths hydrating foods give you water + minerals + fiber + electrolytes to help fluids stay in your tissues.
✨ Herbal teas nettle, rooibos, hibiscus, licorice root, mint, camomile … hydrating and naturally nourishing.
✨ Warm lemon or ginger water hydrates while waking up circulation and digestion.
✨ Humidify your space hydration isn’t just what you drink, but what you lose through skin and breath.
✨ Healthy fats avocado, olive oil, flax, and nuts help your cells hold on to moisture.
✨ Managing caffeine we often drink from black tea and coffee in the winter to keep warm but this can lead to further dehydration.
