I made this Aji verde yesterday and it was 10/10! It’s a Peruvian spicy, creamy and herby sauce. Traditionally it’s mayo-based, but I did a mix of mayo + Greek yoghurt for a lighter, tangier twist. Too much mayo is a bit sicky isn’t it.
Coriander isn’t just flavour, it’s packed with antioxidants, and supports digestion.
Ingredients:
• Very big handful coriander (stalks as well)
• 2 jalapeños
• 1 garlic clove
• Juice of 1 lime
• 1 tbsp mayonnaise
• 1 tbsp Greek yoghurt
• 2-3 tbsp grated Parmesan
• Splash of olive oil
• Sea salt
Method:
Blend everything until smooth and creamy.
Perfect with grilled chicken, salmon, roast veg, tacos etc etc etc! Enjoyyyyy 💚
