Chocolate Granola....Love to sprinkle this on top of porridge. It can also make a great gift for a foodie friend.

I do have a few supermarket options but it's also easy to make. There is a great recipe by Golubka Kitchen for chocolate and banana granola...see below

Ingredients

3 very ripe bananas (1 cup banana puree)
¼ cup + 1 tablespoon maple syrup
1 teaspoon vanilla extract
¼ cup cacao powder
pinch of sea salt
2 cups rolled oats (gf if needed)
1 cup chopped untoasted walnuts or other nuts/seeds

Method

Preheat oven to 350° F (176° C). Prepare a parchment-covered baking sheet.

Mash the bananas in a large bowl until smooth. Add the maple syrup, vanilla, cacao, and a generous pinch of sea salt, and mix until smooth. Add the rolled oats and walnuts/other nuts to the bowl and mix to coat.

Transfer the mixture to the prepared baking sheet, flattening it out with the back of a spoon and spreading it out somewhat evenly over the entire sheet.

Place the baking sheet in the oven and bake for 20 minutes. Remove the baking sheet from the oven and flip the granola, breaking it up into smaller clusters (so that the pieces have a chance to dry out). Bake for another 20-25 minutes, mixing periodically, until the granola is dry and crispy. It will crisp up even more once it cools. Let cool and keep in an airtight container.

I've been very lucky as a friend has donated a huge box of cooking apples from their garden.

What to do with them all? My first plan is to make lots of stewed apple with cinnamon and ginger. It's great to add to porridge, overnight oats or chia pots as well as a classic crumble. It's also nice hot or cold.

Apples also have the bonus of being good for our health. Because of their high fibre content they can improve digestion and support good gut health.

I am a Registered Nutritional Therapist & Health Coach, qualifying from the College of Naturopathic Medicine and have a background in Health Psychology. I have a keen interest in supporting others to improve their health and mental wellbeing. Whether this is through increasing energy, managing stress or boosting low mood, ultimately, I want to help people feel healthy and happy.

Our diet and lifestyle habits influence the functioning of all the major systems of the body and consequently make a difference to how we feel mentally and physically. Nutritional Therapy identifies potential nutritional imbalances and understands how these may contribute to an individual’s symptoms and health concerns.

As a Nutritional Therapist I look at what’s going on with the body as a whole and recognise this will be unique to every individual. I recommend personalised nutrition and lifestyle programmes rather than a ‘one size fits all’ approach. It’s not about a standard diet, it’s about finding what’s going on for you and what works for you personally.

The stresses and pressures of modern life have left many of us feeling drained and overwhelmed with little time to take care of ourselves.
