Sprouts are not just for Christmas! Rich in vitamins (C, K, folate), minerals (potassium, iron, magnesium), fibre and antioxidants like sulforaphane, which collectively support immune function, bone health, heart health and digestion. Gorgeous sliced and stir fried with garlic, evoo, salt & pepper πŸ˜‹ oh and they don't cost much so win win!

So I rescued the pumpkin pulp & made a pumpkin soup for Halloween πŸŽƒ
The pumpkins we traditionally carve for Halloween don't taste that amazing (but they still contain lots of goodness - vitamin A as well as vit c, & of course fibre) so I basically cooked together onions, garlic, carrots, sweet potato and pumpkin with cumin, garam masala, smoked paprika, chilli, sage, stock and coconut milk, then whizzed it up and dressed with extra coconut cream and pumpkin seeds.

A great way to avoid so much going in your food waste!
