✨ Creamy Cajun Chicken Pasta ✨
This one’s always a winner in my house – proper comfort food but still only 368 calories a portion if you dish it up right 👌🏻
Ingredients
650g chicken breast, sliced or cubed
300g penne (uncooked) — 75g per person
1 medium red onion, sliced
2 bell peppers, sliced
Handful Spinach, chopped
2 tbsp tomato purée
200ml chicken stock
60g Philadelphia Light (soft cheese)
Cajun
1 tsp Garlic powder
1 tsp smoked paprika
Salt & black pepper to taste
I season the chicken with some of the JD Cajun and a little salt, then brown it off in a large pan (that colour = flavour). Take the chicken out and set to one side in a dish, in the same pan, add a splash of hot water and soften the onion. Once it’s starting to turn translucent, add the peppers, tomato puree, garlic, paprika and another good shake of the Cajun — stir it all through until it smells amazing 😍
Next, mix in the stock. Bring to the boil, pop the chicken back in and let it gently simmer for around 15–20 minutes so the sauce thickens and the chicken soaks up the spice.
While that’s bubbling away, cook your pasta as the packet says — and don’t forget to save half a cup (about 120ml) of the pasta water before draining. Add the pasta straight into the sauce, take it off the heat and fold in the 60g Philadelphia Light until it’s silky and creamy. Use the pasta water to loosen it to the consistency you like.
Serve with a pile of spinach or greens on the side so if like me 💁🏻♀️ you don’t overload the carbs 🙈💙 what can I say I’m a carbie girl 😂
