Who needs online shopping when there are so many amazing local independent shops .
FaceTime call this morning with who walked me around the shop and I picked a few gifts. did a fb event yesterday and I bought some ornaments and candles.
Visited the village to collect all my items and called to who put a Christmas present hamper together for me and I bought all my cheeses and chutneys 😋. Feeling very lucky to have these shops so close and everyone was so helpful 💕.

Mango ice lollies in the sun ☀️

Thought I’d give the recipe from a go.....yum 😋.

1 ripe banana 🍌.
1 mango 🥭.
5 tbsp coconut milk 🥥.
1 1/2 tbsp maple syrup.

⭐️ Peel and roughly chop banana & mango.
⭐️ Blend all ingredients until smooth.
⭐️ Pour into ice lolly moulds and freeze.

This afternoon’s quick immune supporting protein smoothie.
⭐️ A bunch of spinach & kale
⭐️ Blackberries (fresh or frozen)
⭐️ 200ml unsweetened almond milk
⭐️ Purition strawberry protein powder, which contains whey protein isolate, flaxseed, sunflower kernels, freeze dried strawberries, almonds, chia, pumpkin & sesame seeds, nutritional yeast, fibre, apple pectin & sweetened with stevia....phew! No nasties, nothing artificial.
⭐️ They also do vegan protein powders 🙌.

Butter chicken recipe

(I used fermented tofu, tempeh)

Another recipe with fresh ingredients and staple spices that can be used in many recipes. Easy, nutritious and can be made in a big batch and frozen, and all ingredients are readily available.

This serves 2

⭐️ 175g chicken breast (you can substitute with other meat, fish, tifu or tempeh)
⭐️ 1 tbsp extra virgin olive oil
⭐️ 1 onion, diced
⭐️ 1 tbsp ginger, chopped or grated
⭐️ 2 tbsp tomato paste
⭐️ 1 tsp paprika
⭐️ 1 1/2 tsp curry powder
⭐️ 1 tsp garam masala
⭐️ 1 1/2 tsp chilli powder (optional) 🌶
⭐️ 2 tbsp water
⭐️ 1 tin coconut milk
⭐️ I didn’t measure the veg and you could use anything you like.

Method
💫 Dice chicken, other meat or chop vegan option
💫 Heat the oil in a large pan over a medium heat. Sauté onion, garlic and ginger. Add the veg and stir in tomato paste 🍅, paprika, curry, garam masala and chilli powder. Cool for 1-2 minutes until fragrant.
💫 Add meat or tofu, etc and stir until cooked through, about 5-7 minutes.
💫 Add in the water and loosen the paste
💫 Stir in coconut milk and simmer for 5 minutes
💫 Remove from the heat and serve with either quinoa (plenty in Aldi!), rice or cauliflower rice

Although it might be tempting to just stock up on tinned foods at the moment, we also need to be making sure we’re getting enough nutrients to build our immune system 💪.

Soups are a great way to get plenty of vitamins and minerals, can be made in big batches and stored in the freezer 🙌

Below is a mushroom soup I made packed full of vitamins & minerals including zinc, vitamin C, vitamin E & essential fatty acids to name a few, which are great for the immune system.

Ingredients (approx 2 servings)
⭐️ 1 tbsp coconut oil or extra virgin olive oil
⭐️ 1/2 red onion
⭐️ 3 cloves of garlic
⭐️ 1 1/2 celery stalks
⭐️ 1 carrot (I used sweet potato as I didn’t have carrots)
⭐️ 200g mushrooms
⭐️ 1 1/2 tbsp of tamari or soy sauce
⭐️ 1/2 tsp black pepper
⭐️ 50g cashews
⭐️ 500 ml water

Method

⭐️ Heat the oil and sauté the onion for a few minutes and all the other ingredients (apart from cashews).
⭐️ Bring to the boil, then cover and simmer for 20 minutes.
⭐️ Add the soup and cashews to a blender, top with sliced mushrooms and chilli flakes (optional) and it’s good to go!
⭐️ if you’ve got a soup maker just sauté the onion and then add everything in the soup maker...even easier!
