Thanks for the inspiration!!

Wasn't really sure what to do for tea tonight, after realising I didn't have half the ingredients I needed for the meal I had planned!! That is, until I spotted a post in our members Facebook group!!

I didn't quite have all the ingredients for this week's raffle prize, creamy garlic mushroom spaghetti, but close enough to inspire me to make some mushroom and bacon creamy pasta! (I'd have added some chives from the garden but it's raining 🙈😂)

More pancakes! Much better batch tonight. I'm actually impressed with how well these turned out. I got 3 smaller pancakes this morning (albeit a bit thick) and 3 nice big ones tonight! I even treated myself to a little (carefully measured!) chocolate spread in one of them!! 🤭 😋

Happy Pancake Day!!! 🥞

What kind of pancakes do you prefer?!
Crepes for me.

I've tried a little experiment today.... I'm using my Healthy Extras to make the pancake batter!!

90g wholemeal flour (seived)
250ml semi-skimmed milk
2 large eggs

Actually turned out pretty well! I did put too much batter in the pan though 🙈
And by using my Healthy Extras, my swips are available for the essentials..... Sugar and lemon!!! 🍋

Oh my golly gosh.
This was DELICIOUS!!!

My take on the Japanese cheesecake craze that's been doing the rounds, with a tiramisu twist!!

Cafe latte yoghurt, sponge fingers, a tablespoon of Melin Llynon Siocled orange chocolate liqueur and sprinkled with hot chocolate powder.
5.5 swips!!

Could I put more liqueur in?? Absolutely. Estimated 2.5 per 25ml (based on other liqueurs of its type) .
More sponge fingers? 2.5 per 2.

Honestly, bloomin lovely just as it was!!
So much so, I'm making another one for tomorrow....
