Beth’s amazing journey started after being bridesmaid twice for two very close friends and instead of feeling great on the day she felt angry and sad that she hadn’t lost the weight she’d promised herself she would. When she saw the photos from the wedding she was mortified and that made her take action to find a Consultant and start The 1:1 Diet. She hasn’t looked back since…

❤️It’s suitable for Step 3 if you use 55kcals from your dinner allowance, and for Step 4 and 5 as part of your 100kcal bonus allowance.

❤️So what are you waiting for!

❤️Directions
Mix the crumbled Strawberry and Apple Bar and Quark together
Chill in the fridge for 10 minutes
Divide the mixture and roll into small balls
Roll each of them in desiccated coconut to coat them
Chill in the fridge for another 5 minutes
Enjoy!

💕 Couple goals 💕

Ollie and Lizzie have inspired and supported each other throughout their weight-loss journey. Together they have lost an incredible 14st 13lbs on The 1:1 Diet 🙌

We asked them, since successfully losing weight what’s been your proudest moment 👇

“I think we have several. One of them has to be Ollie winning Man of the Year 2023. He lost weight for himself, but also because he wanted men to know it’s ok to diet and to show people that it’s possible to overcome the impossible!

Another has got to be Ollie training for the London Marathon this year. He’s running in memory of my mum, who lost her battle to Pancreatic Cancer in 2021. Before starting his plan in 2022, Ollie could barely even walk - so this is a massive achievement.

Finally, the fact we’ve lost enough weight to be accepted for IVF! We’ve had our first IVF cycle and we did actually get pregnant. It sadly ended in miscarriage, but we know that our fertility journey isn’t over yet.

Our weight stopped us from doing so much before that we lacked the confidence to do, and now there is no stopping us! We just wish we’d started sooner.”

Wednesdays I certainly find hard…not quite the motivation I feel on a Monday and the excitement of Friday is still a couple of days away…..

Most people will question why they started and ask is it worth it ! This is when we have to dig deep and remind ourselves what made us start in the first place.

You have to use the discipline to keep the motivation going.

The first picture was me the end of December and the second today the 14th February is it easy NO but oh my God it is worth it! 🫶🏻

🥞 Pancake Day is here! 🥞

These are Step 3 and above
80 calories each

You need...🥞

1 Medium Banana 🍌
1 Small Egg 🥚
1 pinch Baking Powder

Instructions 🍌

Mash the banana with a fork. Try to get a mixture which is just slightly lumpy - you don’t want a ‘puree’ and nor do you want large pieces of banana. It’s best to use a slightly over-ripe banana for these pancakes. Sprinkle over the baking powder and mix well.

Beat the egg in a separate bowl until the yolk and white are well mixed and then add the egg to the banana and baking powder. Don’t add all the egg at once, the mixture should be about the thickness of creme fraiche - if it’s too runny you’ve added too much egg and you may find the result is closer to an omelette than a pancake!

Heat a non-stick frying pan over a medium heat. 🥞

Drop about a tablespoon of the mixture into the pan and let it spread. Continue making small pancakes (this quantity should make 5 or 6). It’s important to make small drop pancakes. If necessary you can cook these in batches and keep them warm in the oven for 10 minutes or so.

Cook for about 2 minutes till the bottom of the pancakes are set and have started to go golden brown and there are little bubbles rising from the baking powder. Flip the pancakes over and cook for a further minute.

Serve with fresh berries and/ or greek yoghurt. (make sure you add in the extra calories for this)

✅ Step 3 and above ⁣
✅ 400 Kcals/portion ⁣
✅ Serves 4 ⁣

🛍 You’ll need: ⁣
100g salted/cool tortilla chips⁣
100g grated reduced-fat cheese⁣
A handful of coriander, chopped⁣
3 chillies ⁣
4 black olives, thinly sliced⁣
4 tbsp 0% fat Greek yoghurt⁣
1 onion, finely chopped⁣
2 garlic cloves, crushed⁣
1 tsp ground cumin⁣
1 tsp ground cinnamon⁣
1 tsp ground coriander⁣
300g extra lean minced beef (5% fat max)⁣
2 tbsp tomato paste⁣
1 x 400g can chopped tomatoes⁣
1 x 200g can red kidney beans ⁣
300ml beef stock⁣
Spray oil⁣
Salt ⁣
Black pepper⁣

🥣 Method:⁣

1️⃣ Lightly spray a saucepan with oil and set over a low to medium heat. Cook the onion and garlic for 8–10 mins, stirring occasionally, until tender. Add the chilli and ground spices and cook for 1 min. ⁣

2️⃣ Add the minced beef and cook for 4–5 mins, stirring, until browned. Stir in the tomato paste, canned tomatoes, kidney beans and stock, and bring to the boil.⁣

3️⃣ Reduce the heat and simmer gently for 15–20 mins until everything is cooked and the sauce has reduced to a thick consistency. Season to taste with salt and pepper.⁣

4️⃣ Heat an overhead grill on the highest setting. Spread out the tortilla chips on a baking tray and sprinkle with three-quarters of the grated Cheddar. Spoon the spicy beef chilli over the top, leaving gaps to expose some of the tortilla chips. Sprinkle with sliced chilli, black olives and the rest of the cheese.⁣

5️⃣ Cook under the hot grill for about 5 mins until the cheese is melting, golden and bubbling. Divide between four plates and serve with the chopped coriander and a spoonful of yoghurt.⁣
