I simply looooove butter bean. A favourite amongst Jamaicans when combined with oxtail. This Chicken in Butter Bean as a curry is "gentle" on the palate.

Marinate chicken with the spices to absorb flavour before cooking

6 chicken fillet or 3 chicken breasts
1 onion into cubes
2 teaspoons Tandoori Curry Powder
1 teaspoon tumeric powder
1/2 teaspoon ground ginger
2 garlic cloves, crushed or chopped
1 teaspoon fine coriander powder
1 teaspoon paprika
Salt to taste
1 large potatoe peeled and chopped into 6 pieces
1 tin of butter beans
3/4 tin of chopped tomatoes
2 teaspoon tomato paste

METHOD
Sautee onion in ghee or vegetable oil for 3 minutes over medium flame

Add the marinated chicken to the pot along with the tomatoes and potatoes.

Cover and cook for ten minutes (add a little water if seem to dry out) .

Add the tin of butter beans along with the tomatoe paste and leave to simmer so that the liquid is reduced or reach the gravy thickness liked.
Season to taste with salt.

Serve with boiled white rice (a cup will serve 3 persons)

For freezing, cook the chicken in extra gravy and place in casserole dishes before adding the tomatoe paste potatoes and broad beans to the pot for that evening's main meal. These three ingredients can be added when needed for future meals.

Lentil Dhal (Lentil Dal Recipe)

This Lentil Dhal meal is sooo pack full of protein, cheap as chips and great to serve as a delicious lunch too on bread, mash, roti or boiled rice.

Lentil Dhal Recipe cooking instructions -
1 tbsp cooking Oil
100g Red Lentils
1 large onion chopped
3 garlic cloves crushed
2 tsp Mild Curry
1 tsp tumeric
3 chopped tomatoes (a third of can tomatoes can be used)
1 tsp tomatoes puree
2 tsp yoghurt or cream fraice (optional)
300ml of water

Ensure all ingredients are prep and ready to be used. Heat the cooking oil over medium flame in a deep pan as dhal will double in size. Add the onion and garlic. Cook till soften which will be about 3-5 minutes. Add the remaining ingredients. How easy!

Cook until lentils are soften to a gently crunch. Not mushy like porridge if going to freeze.

Serve with cook white rice.
Oh so cheap and easy to prepare. I am a meat lover and always felt like I didn't have my required nutritional intake of protein when not on the plate. Here's how to prepare this quick and easy meal, pack full of protein. I serve this with a pea mint soup to the members of my household who are not fan of curry - to take the 'edge' off.

Homestyle Chicken Curry Recipe - my preference to the calorie-filled bottled sauce versions on shop shelves. This recipe serves 4 but can be stretched serve more in the household by just increasing chicken, yogurt and adding salt to taste.

The Greek Yogurt extends the gravy base which can be frozen and used also with a mix of vegetables such as peas, mushrooms, Cauliflower and meat such as lamb. Great served with rice or roti. I suggest having all the ingredients laid out and ready to go. Minced garlic and ginger along with spices can be found in boxes or packets in your supermarket.

1 large onion finely chopped
2 medium tomatoes finely chopped
200g natural Greek yogurt
2 large chicken breasts cubed or substitute with turkey
2 tbsp cooking oil
1 tbsp minced garlic
1 tbsp minced ginger
1 dried Bay leaf
5 whole cloves
1/2 tsp cumin seeds
3 green cardamom pods
4 black peppercorns
1/4 tsp turmeric
1/2 tsp cumin powder
1/2 corinader powder
1/2 tsp Gram Masala
1/4 tsp red chilli powder (optional)

Place oil along with bay leaves, cloves, cardamom and peppercorn in a deep frying pan over low heat. Once aroma is released and spices begin to sizzle, add the cumin seeds, onions, garlic and ginger. Move items gently around the pan until onion appear softened. Mix in the tomato and the rest of the spices and cook for a few minutes. Whisk the yogurt up with a fork and add this to the spice mixture. Then add the poultry, meat or vegetable of your choice. Cook for about 15 minutes over gently medium heat. Cool before placing in Tupperware for freezing.

Yum! Yum! Beef Stroganoff

Ingredients (makes 5 portions and great for freezing)

500g Diced Braised Beef (which cooks for 1 and a half hour) or

500g Beef tenderloins cut into fine strips ( cooks in 25 mins)

1 Tablespoon cooking oil
2 onions chopped
1-2 garlic cloves crushed (not two bulb!)
15g butter
300g button mushrooms
300ml sour cream
2 tsp Tarragon
Salt and pepper to taste

Add oil to a pan over hob with medium flames.

Place the chopped onions in the pan with the beef and crushed garlic.

After 3-5 minutes of stirring add the butter, mushroom, Tarragon and the sour cream.

Leave to cook for 10 minutes if using the sliced beef or

1 1/2 hours if using braised diced beef.

Serve with white rice pulled from the freezer and thawed in the microwave.

Tandoori Spiced Baked Chicken

In this meal, I used chicken breast. Chicken thighs and chicken pieces work just as well. To ensure, the chicken stayed succent and moist, I didn't cube the chicken but rather defrosted the raw chicken breast with the chopped onion and spices tossed piled on top. This allows the chicken to absorb and marinate in a oven proof dish covered with clingfilm.

Determine the amount of chicken needed for meals in the week. For each piece add 1/2 teaspoon of Tandoori Powder

Ingredients
2 onions chopped

2 garlic cloves mashed with back of a spoon

250ml Greek plain Yogurt (go for more if you need lots more gravy)

1/2 teaspoon tandoori powder for each piece of chicken

1/2 teaspoons of coriander powder, chilli powder and tumeric

2-3 teaspoon paprika

1 teaspoon cayenne powder

1 teaspoon salt

Elimate chilli and cayenne if you don't like heat. Add more salt and tandoori spice mid way cooking to get it to your liking.

Spread the contents evenly in the oven proof dish. Preheat oven and cook at gas 5 or 200c in the oven for 25 mins.

You can cut the chicken breasts in cubes. When cool, pop into tupperware dishes to be frozen and later eat with cooked white rice. Enjoy!

Kedgeree

Smoked haddock
Defrost boiled rice
Tablespoon curry powder
Two onion chopped
Two boiled eggs
40g butter
70g green peas
Parsley

Boiled steamed rice set aside. Cook the onions in the butter until soften add the curry and stir until coated.
Add the fish and salt and pepper to taste.

Add the rice and peas and stir careful not make it mushy.

Sprinkle with Parsley and serve.

Chicken Casserole

Ingredients required

Two chicken breast
Two potatoes cubed
2 large carrots chopped
A bunch of chopped spring onions
400ml chicken stock
75g Green peas
Parsley

Add a slash of oil to fring pan abd brown carrots then set aside. This will give the dish some color.

Add the chicken and brown on both side.

Add the carrots, spring onion, stock and potatoes and leave to cook for 20 minutes on the hob on medium heat.

When done add the parsley then serve with a side of creamy mashed potatoes.

Mushroom Bacon Pasta Bake

Preheat oven at Gas 5.

You will need
2 strips of streaky bacon
Teasppon of Butter
A pack of closed cup chesnut mushrooms chopped
2 garlic cloves
Two twigs of rosemary
Pinch of paprika
1 can of quality Mushroom soup

Boil Penne pasta in a saucepan using the recommenadation on pack for the serving needed.

Do not salt water heavily as the bacon will add salt to the meal

Fry first the bacon before adding the chopped mushrooms, garlic and rosemary together in a saucepan with the butter

When soften set aside.
Once the penne is cooked add half a can of the mushroom soup. If not runny put the remaining amount with the penne.

Now stir in the mushrooms, garlic, rosemary and bacon

Tip the mixture into a casserole dish, then transfer to the preheated oven. Cook for 20 minutes stirring half way to ensure the top is not crispy.

Serve hot with salad or garlic bread. Enjoy!

Jamie's Stir Fry

Special thanks to Tesco for sharing this tasty recipe. Pull out from the fridge cooked shredded chicken thighs and boiled white rice from the freezer.

White long grain rice, 250 grams
Unsalted peanuts, four teaspoons
A red pepper
A clove of garlic
4cm piece of ginger
Carrots
Half a red onion
A quarter of a white cabbage
Half a head of broccoli
Cooked chicken thighs, 200 grams
Oil
Mangetout, 150 grams
Raw peeled king prawns, 160 grams
Hoisin sauce, two tablespoons
Method:

1. Cook the rice according to the packet instructions, then drain and leave to cool. If you spread it across a plate, it will cool more quickly.

2. Crush the peanuts in a pestle and mortar. Deseed and finely slice the red pepper. Peel and finely chop the garlic. Peel and finely chop or grate the ginger.

3. Prep the carrots, onion, cabbage and broccoli – trim and peel as appropriate, then coarsely grate it all on a box grater leaving a few small broccoli florets whole. Remove any chicken skin and thinly slice, then shred the chicken.

4. Put a large non-stick frying pan or wok on a high heat with ½ a tablespoon of oil. (It’s best to stir-fry no more than two portions at a time, so you have enough room to keep everything moving around the pan.)

5. Sprinkle in half of the garlic, ginger, chicken and skin, and stir-fry until everything is really crispy.

6. Stir in half of the prepped veg, broccoli florets, pepper, mangetout and prawns and toss well over the heat for a couple of minutes, until the prawns are pink and cooked through.

7. Add half the cooled rice and hoisin sauce and stir-fry for a few minutes, until the rice is hot through, then season to perfection.

8. Divide between two plates, sprinkle over half the nuts and two lucky people can tuck in right away, while you repeat with the rest of the ingredients.

Shepherds Pie Recipe...

Ingredients
250g Shepherds Pie Mince
Two carrorts cube
One onion chopped
60g Mushrooms
1 tsp Marmite
1 tbsp Worcester sauce
1 Beef, Chicken or Vegetable Stock
Half cup red wine
Mash potatoes

Fry the chopped onion until soft before adding the mince.
Dissolve the stock and mix in the marmite
Add all the remaining ingredients to the pot and leave to simmer.

After 15 minutes or when the sauce is reduced to to a consistency that is good to serve as gravy for each individual, place contents in an oven proof casserole dish and layer on top mash potatoes with grated cheese on top for good measure. Place in a preheated oven for 25 minutes at Gas 5

Serve with your favourite greens

Ingredients
1 cup Frozen green peas
2 cubes frozen spinach defrosted
1 cup of leftover boiled white rice
Strips of cooked chicken meat
1 Tbsp Gee or butter
1 Tbsp Soya sauce

Heat a wok over high heat with the gee. When smoking, add all the above ingredients stirring together until hot.

Dish up and serve. Enjoy!

Chicken Casserole with rice. Ingredients

3 x medium size carrots
1 Onion
2 peg garlic
3 sprigs thyme leaf
2 chicken breast serves 4-5 persons
1 Knorr Chicken Stock Pot
2 cups rice cooked to your liking

Heat a tablespoon vegetable oil to frying pan
Cube chicken breasts to bite sizes (leave to the side)
Add chop carrots, onion and garlic and add to pot and fry until golden
Add the chicken until brown
Add a cup of water and the stock pot
Cover pot and leave to cook for 15 minutes

Serve with with boiled white rice, green peas or fine beans. Delicious!

Tasty Braised beef served with kidney Bean rice which is packed full of protein and iron

Ingredients...
Diced braised beef
1/2 cup of flour
Salt and peppe
2 tablespoon cooking oil
Knox Rich Beef Stock
One can kidney beans
A cup of rice for the number of person being served
A can of coconut milk
Preheat oven Gas Mark 5 or cook on the hob for 5 minutes.

In a deep dish, toss together the diced beef, flour, salt and pepper until fully coated.

Place frying pan over a hot flame, brown the beef in about two tablespoon of cooking oil.

Mix the stock in 230 ml of warm water then pour gently into the frying pan.

Simmer for 5 minutes before transferring to a casserole dish suitable for oven use. Cook for 2 1/2 hrs until tender.

You can serve with white or kidney bean rice.

The Best Onion Gravy for Sausage and Mash

Ingredients
1/2 stick (56 grams) unsalted butter
2 large yellow onions , peeled, cut in half and thinly sliced (or diced if you prefer smaller pieces)
2 teaspoons sugar
1/2 cup red wine
2 sprigs fresh thyme
1 large sprig fresh sage
2 cups strong beef broth
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon prepared yellow mustard
1/4 teaspoon freshly ground black pepper
1 tablespoon dark balsamic vinegar
1 tablespoon cornstarch dissolved in 1 tablespoon water
2 tablespoons cold unsalted butter

Instructions
Pour a little oil in a saucepan over medium high heat. Add the sliced onions and the sugar and cook for about 30 minutes until caramelized (deep golden). Add the red wine and herbs, bring to a rapid boil for 2 minutes, reduce the heat and simmer for 10 minutes. Add the stock and Worcestershire sauce, bring to a boil, reduce the heat to a low simmer and simmer, covered, for 20 minutes. Remove sprigs of herbs. Add the vinegar, whisk in the cornstarch or cornflour and simmer another minute or two until thickened, whisking continuously. Add the cold butter and whisk until dissolved. Add salt and pepper to taste and mustard if desired.

Egg freezing - saving money and having ample supply ready when needed. Just break the eggs - please do not freeze them in the shell - and using a muffin tin or my preference a ice cube tray, you can put the whites or yolk separately in the separate compartments.

Alternatively you can mix a batch and freeze for use to make a quick and tasty Spaghetti Carbonara meal for the family!

Tupperware or plastic sealable containers for freezing meals. All you need to do when ready to freeze a favourite dish is to allow it to come to room temperature ie cool down. Put it into an airtight, tupperware or any freezer safe container and put it in your freezer for up to 3 months. Don’t forget to label your container so you’re sure of the meal you desire when ready to use it!

A place for busy moms to plan ahead and freeze health foods for their families.

I am a busy mom! I work part time and run a household. There is only 24 hours in a day and only one of me! Like most households, keen on healthy living and healthy eating for my family, I have created this page for other mom’s to join me on my pre planning food journey. My heritage and experience with food have made me realise how important food needs to be the top priority in our lives. Grilling, baking, roasting, boiling or frying.....I wish to share my foolproof way of preparing ahead and learning to use just a few ingredients to make a healthy meal for the entire family.
