I simply looooove butter bean. A favourite amongst Jamaicans when combined with oxtail. This Chicken in Butter Bean as a curry is "gentle" on the palate.
Marinate chicken with the spices to absorb flavour before cooking
6 chicken fillet or 3 chicken breasts
1 onion into cubes
2 teaspoons Tandoori Curry Powder
1 teaspoon tumeric powder
1/2 teaspoon ground ginger
2 garlic cloves, crushed or chopped
1 teaspoon fine coriander powder
1 teaspoon paprika
Salt to taste
1 large potatoe peeled and chopped into 6 pieces
1 tin of butter beans
3/4 tin of chopped tomatoes
2 teaspoon tomato paste
METHOD
Sautee onion in ghee or vegetable oil for 3 minutes over medium flame
Add the marinated chicken to the pot along with the tomatoes and potatoes.
Cover and cook for ten minutes (add a little water if seem to dry out) .
Add the tin of butter beans along with the tomatoe paste and leave to simmer so that the liquid is reduced or reach the gravy thickness liked.
Season to taste with salt.
Serve with boiled white rice (a cup will serve 3 persons)
For freezing, cook the chicken in extra gravy and place in casserole dishes before adding the tomatoe paste potatoes and broad beans to the pot for that evening's main meal. These three ingredients can be added when needed for future meals.
