Some days it feels like everyone’s an expert and no one agrees.

One day you are told coffee will ruin you. Next day you are told it might save your life.
Meat is poison. Meat is necessary.
Carbs will kill you. Carbs are fuel.

Most of my clients are smart enough to spot nonsense but even then it can get confusing.
One scroll online and you are buried under ten conflicting takes and sponsored hacks.

So here’s my question: when advice feels so opposite, how do you handle it?
What do you trust?
What do you ignore?
Do you go by feel, by habit, by someone you trust?

You can spend a fortune on the table, the wine, the plates. None of it matters if the bird was raised wrong.

One good ingredient makes the meal. A cheap shortcut ruins it.

I trust my farmers, I trust my fishmonger, I trust my process.
And my clients trust me... because they know that bit never changes.

Call it old-fashioned. Call it slow. Call it proper.

SHOOT DAYS THAT STAY WITH YOU

There is something about a good day in the field that you cannot fake. The dogs, the guns, the land, the people. By the time the last bird is done, everyone’s cold, tired, and hungry for more than just food.

What you serve at the end either makes the day or forgets it.

I have fed small private shoots and royal family gatherings where the table was the real trophy at the end of the day. Honest game, cooked properly, warm drinks, conversation that goes well past the meal.

People see meal prep and think plastic boxes lined up in sad rows. That is not me.

When I say meal prep, I mean real food that makes your week run smoother. Proper produce, meals done to fit your life, kids fed with zero fuss, you eating better without the cheap shortcuts.

This is not a calorie-count service or influencer nonsense. This is a private chef approach for people with better things to do than stand at the cooker every night.

Cotswolds Nutrition Chef is looking for a dependable part-time chef to work alongside Ross Rochelle, supporting fresh meal prep, private dining and seasonal events.

This role suits someone who understands quality ingredients and knows how to keep standards high when it matters. You’ll help prepare clean, seasonal meals for private clients, assist with plating and service for intimate dinners, maintaining the kitchen and keeping it well stocked and organised, and step in to lead when Ross is off-site.

Hours are flexible, typically two or three days a week to start, with extra days for events as needed. Ideal for an experienced chef who wants steady, rewarding work without fuss.

You should be based in or near the Cotswolds and happy to travel for the occasional off-site event.
