Tasty Detox Quinoa Bowl with Cilantro (Coriander) Pesto and Turmeric Grilled Chicken for all my fellow foodies out there
Ingredients:
For the Bowl:

1 cup quinoa, cooked
1 cup steamed broccoli
1 cup shredded carrots
1 red bell pepper, diced
1 avocado, sliced
1/4 cup red onion, chopped
1/4 cup pumpkin seeds
1/4 cup fresh parsley, chopped
For the Cilantro Pesto:

1 cup fresh cilantro (Coriander)
1/4 cup fresh parsley
1/4 cup walnuts or sunflower seeds
1/4 cup olive oil
2 tbsp lime juice
1-2 garlic cloves
Salt and pepper to taste
For the Chicken:

4 chicken breasts
2 tbsp olive oil
1 tsp ground turmeric
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper
Juice of 1 lemon
Instructions:
Cook Quinoa: Prepare 1 cup quinoa as per package instructions.
Steam Veggies: Steam 1 cup broccoli; prep 1 cup shredded carrots, 1 diced bell pepper, 1 sliced avocado, and 1/4 cup chopped red onion.
Blend Pesto: Blend 1 cup cilantro, 1/4 cup parsley, 1/4 cup walnuts, 1/4 cup olive oil, 2 tbsp lime juice, and 1-2 garlic cloves. Season with salt and pepper.
Marinate Chicken: Rub 4 chicken breasts with 2 tbsp olive oil, 1 tsp turmeric, 1 tsp cumin, 1 tsp paprika, salt, and pepper. Grill, then squeeze lemon juice over.
Assemble: Combine quinoa, veggies, and pesto in a bowl. Top with chicken, avocado, pumpkin seeds, and parsley. Enjoy!
