⭐Frozen is your FAB Friend! 🥦 Don't sleep on the frozen aisle! Frozen fruit and vegetables are picked at peak freshness, are just as nutritious, often cheaper, and help reduce waste. Perfect for throwing into stir-fries, curries, or blending into a smoothie!

⭐Embrace Tins & Pulses: 🥫 Beans, lentils, and chickpeas are incredibly low-cost, packed with protein and fibre, and keep you feeling fuller for longer. They're a fantastic way to bulk out meals like chilli, soups, and stews for just pennies.

⭐Plan, Plan, Plan! 📝 Take 10 minutes to plan your meals for the week. Check what you already have, write a shopping list based on what's on offer, and stick to it! This alone is a game-changer for avoiding impulse buys.

⭐Love Your Leftovers: ♻️ Cook once, eat twice! Making a bigger batch of your favourite Speed soup, Bolognese, or curry means you have a free lunch or dinner ready to go tomorrow, saving you time and money.

⭐Get Friendly with Seasonality: 🍓 Produce that's in season is usually more abundant and therefore cheaper. Swap out those expensive berries for a seasonal alternative like apples or pears!

🎂✨ Bake Off is back – and yes, you can have your cake and eat it with Slimming World!

Healthy cake recipes aren’t always easy to come by, but with our slim-safe cakes, biscuits and bakes, you can join in the bun fun without letting your weight loss go stale 😉. No soggy bottoms here – just delicious treats that fit right into Food Optimising.

🍋 This week’s star? Our slimming-friendly lemon drizzle cake – light, lemony sponge topped with zingy drizzle icing and candied lemon slices. At just 4 Syns per serving, it’s the zest thing since sliced cake 🥰.

👉 Fancy the recipe? Here’s how to bake it:

Ready in 45 mins + cooling

Vegetarian

Serves 8

4 Syns per slice

👩‍🍳 Step-by-step method + full recipe here ⬇️
What you need:

2 eggs
50g extra-light spread (30% fat), suitable for baking
6 level tbsp sweetener granules
100g self-raising flour
grated zest and juice of 1 unwaxed lemon
2-3 drops vanilla essence

for the candied lemon:

1 unwaxed lemon, thinly sliced
1 level tsp sugar

for the lemon drizzle:

2 level tbsp icing sugar
juice of ¼ lemon
2 drops yellow food colouring (optional)

What you do:

1. Preheat your oven to 180°C/fan 160°C/gas 4. Line a small loaf tin with baking paper.

2. In a bowl, whisk together the eggs, spread and sweetener. Sieve in the flour and fold into the mixture with the lemon zest and vanilla. Pour the mixture into the loaf tin and bake for 25 minutes, or until firm and golden. Remove, put on a wire rack and allow to cool completely.

3. Once the cake is in the oven, make the candied lemon. Put the lemon slices and sugar in a small pan with the sugar and enough water to just cover them. Bring to the boil over a high heat, then reduce the heat to low and simmer for about 10 minutes. Drain well, then spread the lemon slices out on non-stick baking paper and leave them at room temperature to dry and crisp up.

4. To make the lemon drizzle, mix the icing sugar in a small bowl with the lemon juice and food colouring (if using) to make a spoonable mixture. Drizzle evenly over the cake and top with the candied lemon slices. Cut into 8 slices to serve.
