Oliver served an 8oz venison loin with fondant potato, Jerusalem artichoke and truffle purée, crisp kale and parsnip crisps, finished with a rich red wine reduction. Dessert was a lemon and Manchester honey cheesecake with mascarpone and honeycomb crisp, paired with a WaterADE ‘Vimto’ of raspberry, blackcurrant and spiced grape.
