Remember during lockdown when all the restaurants were closed and all the recipe books were being shared on what’s app!! We all started experimenting cooking our favourite restaurant dishes…well this broccoli salad was the first thing I tried from .

All the different flavours explode in your mouth…it’s sweet, it’s tangy, it has a kick, it’s soft, it’s got a crunch and most importantly full of all the colours of the rainbow and super gut friendly

This is my take; adapted slightly to our taste but give it a go and let me know what you think

Let’s make Pau bhaji

🧑🏽‍🍳Chop the veggies of choice (we had aubergine, carrot, peas, sweetcorn, capsicum and a tin of kidney beans)
🧑🏽‍🍳 Add to a pan with water and cook until soft
🧑🏽‍🍳Drain excess water and mash
🧑🏽‍🍳 Sauté 1 chopped onion and 1 garlic clove in another pan (you can add oil if you wish but it works great in a non stick pan without it)
🧑🏽‍🍳 Add ginger and garlic to taste along with spices (1tsp coriander cumin powder, 1tsp pepper, 1tbsp garam masala, 1 tsp kasturi methi, 1/4tsp turmeric and salt if you desire). Stir through
🧑🏽‍🍳 Add 1/2 tin chopped tomatoes and cook until a thick
paste forms
🧑🏽‍🍳Add the mashed veg and if dry add the remainder of the tomato tin. Stir and cook on med heat
🧑🏽‍🍳 Now the secret ingredient … which gives you a great creamy buttery taste without oil and butter…. Add 2 tbspn of coconut milk, mix and continue to cook
🧑🏽‍🍳Garnish with spring onions (and coriander if you wish)
🧑🏽‍🍳Serve warm with a bread roll (or a high fibre wrap)
