Stuffed Aubergines

I had to think of something new to do with aubergine as we have so many from the garden.  You could add any herbs or spices you want really. I didn't measure amounts.

Ingredients

Aubergines
Garlic
Onion
A pepper
Tinned tomatoes
Dried oregano
Paprika
Red wine vinegar
Feta
Salt and pepper

Cut your aubergines length ways, scoop out the centre and set aside. Preheat the oven to 180°c and brush the aubergines with olive oil all over, sprinkle with salt and cover with foil. Bake for 20 mins.
Chop the aubergine,  onion, pepper and garlic and fry in olive oil till soft. Add in the herbs and spices and fry for a couple more minutes. Add in the tomatoes, red wine vinegar salt and pepper and simmer till the moisture has evaporated.
Remove the aubergine halves from the oven and fill with the mixture, topping off with crumbled feta. Return to the oven for a further 10/15 minutes.

Hypnotherapy is particularly helpful for all things sleep related, but this lovely girl's sleep disorder was so much more than insomnia or nightmares, infact it was something I'd not heard of let alone encountered.
