Kale soup 🥣

This superfood soup is packed with protein and fibre, it is seriously tasty, low in calories and great for the immune system 😇🥣

First I made a really quick stock in the pressure cooker using the scraps from an onion, carrot ends, kale stalks, broccoli stalks and celery, you could add a chicken carcass too.

Ingredients
Olive oil
1 large carrot diced
2 sticks of celery diced
1 onion diced
2 garlic cloves
A bag of kale, remove stalks
1tsp fresh rosemary
1/2 tsp dried thyme
Tin of butter beans
Chilli flakes
Stock
Half a lemon

Method
Heat the olive oil in a large saucepan
Add the onion, carrot, celery, garlic, rosemary, salt, pepper m, chilli flakes and thyme.
Cook until soft.
Add the beans and stock.
Simmer for 20 minutes.
Add the kale, cook for 5 minutes.
Squeeze in some lemon juice and blitz.

The lemon really lifts it! 😋

This is one of my favourite soup recipes and is so easy to do…

Ingredients
2/3 carrots peeled and cut into chunks
2/3 courgettes sliced
A couple of peppers cut in half
1 red onion peeled and cut in half
1 white onion peeled and cut in half
A whole bulb of garlic
A drizzle of olive oil
A sprinkle of chilli flakes
Chicken or vegetable stock
Salt and pepper

Method
Add all the vegetables,
olive oil - gift from
chilli flakes
salt and pepper to an air fryer and cook on 180 degrees for approximately 25 minutes.

When cooked add some stock, squeeze out the garlic and blitz.

So tasty 😋
