Baked crispy mushrooms

Preheat the oven at 200
Wipe clean 4 large portobello mushrooms , you can scrape out the mushroom but I prefer not too
Spray with oil and pop in the oven for 5 minutes
Whilst the are in the oven mix together 80g of cooked shredded chicken , chopped cherry tomatoes, broccoli, 35g of cream cheese, 40g of grated cheese , teaspoon of mixed herbs, chilli powder optional I used 1/2 teaspoon with 1/2 teaspoon of garlic granules salt & pepper.
Take the mushrooms out of the oven filled with the mux and top each one with breadcrumbs approximately 5g on each one but you can use as much as you like just count them in to the calories. Pop them in the oven for 12-15 minutes , if your mushrooms are very thick it can take longer up to 20/22 minutes

Week 1-week 6💪💪💪

This is why I get my clients to do before & after pictures . It’s all too easy to get fixated on the scales and to pin on your progress on that number . The ultimate goal that I want for my clients is to feel good , to feel healthier , fitter, stronger , to have a better relationship with food, to understand calories and what your bodies needs because no 2 people are the same.

Yes of course when you sign up to a weight loss program you expect the scale number to go down and it will if you stick to the calories set but it’s not the only form of progress

This lady was going away on holidays at the end of the 6 weeks feeling great. In total from January though this lady has dropped 20lbs , with a break in between those months till now she is doing amazing and when she returns from holiday she already has a goal in mind to start working on that I’ve no doubt she will smash 💪

This is a very simple soup but at the same time very tasty. If it was only me eating it I would have added more spice flavours but unfortunately not everyone in my house is fond of that taste . So this is great for the plainer palette

Tasty chicken

Ingredients
900g of chicken breast
1 large onion
15ml of Worcestershire sauce
15ml of olive oil
25ml of lemon juice
Half teaspoon of frozen chopped garlic
1 tablespoon of smoked paprika , plain is fine too
1 heaped teaspoon of ground coriander
15g of tomatoe puree
S&P

I served it in a baked potato and melted cheese on top it was absolutely delicious 😋

Easy oat slices

Serves 5

Ingredients

140g of plain oats
320g of fat free Greek yoghurt
1 teaspoon of baking powder
1 tablespoon of cinnamon
Half teaspoon of ground spice (optional)
Any sweetner of your choice I used flavour drops vanilla flavour you could use vanilla essence

Simply mix everything together and place in an oven proof non stick dish for 30 minutes

This meal is on my plan every week, it has helped so many of my clients also on their weight loss journey as it is one of the easiest meal prep dishes to make . You can bulk this out more with extra vegetables . I’ve made this also adding grated carrot & courgette & chopped mushrooms . It’s very versatile. It can be done also with any other minced meat or minced meat alternatives like quorn mince etc.

I love a good pasta dish

Ingredients

200g dry pasta
400g chicken breast
1 pot of Dolmio stir in sauce , this is for convenience if you want make your own
600ml vegetable or chicken stock
1 onion &pepper
3 mini tubs Philadelphia light cream cheese or any cream/cream alternative
S&P

After the 15 minutes drain the pasta of the excess water i forgot to mention that on the recording

362 calories
34g protein
43g carbs
6g fat
0.6g salt

Curried Brussel sprout soup

Serves 5/6 portions

Ingredients
500g Brussel sprouts halved and washed
400g potatoes chopped
10 ml oil
2 onions roughly chopped
3 crushed garlic cloves
1 red chilli Finely sliced
1 stock cube
1 teaspoon of mild curry powder
1 teaspoon of garam masala
1 teaspoon of ground coriander
1.7 litres of water for stock use less if you want it quite thick
Salt & pepper

Method
Heat the oil in a large pan, fry off your chilli and garlic for a minute then add your onion, garam masala and coriander,. Fry for a few minutes and add the potatoes, Brussel sprouts and stock water. Bring to the boil and then turn down the heat and simmer for 40 minutes ensuring the potatoes are soft.

Next your going to blend it up , a hand blender works fine . If your transferring it to a large blender don’t blend it when it’s piping hot leave it sitting off the heat a few minutes. Blitz till smooth

You can add some cream or milk to give a creamier texture /taste when blending or dollop the cream /crème fráiche on top when serving , season with salt & black pepper
