As part of the conference programme, Brendon contributed a pre-recorded video demonstration showing how to create a specially designed mousse cake, developed to be suitable for residents with swallowing difficulties. The recipe highlights how texture-modified meals can still be creative, appealing, and enjoyable for residents who require modified diets.
