Linoleic Acid
I've spent the last 4 years studying different fats and their affect on the body. I can say with a high level of certainty that you do not want high levels of linoleic acid in your diet.
Without getting into the technicalities of what it does to your body as I don't want to loose those who are not well versed in the literature, I will say this.
It begins to break down the commucation between cells in the body. Particularly at the level of the adipocites (fat cells). Your fat cells are part of your endocine system (hormonal system). When the break down of communication happens at this level all sorts of problems start to arise.
Namely metabolic dysfunction. This is the basis of most of our modern health problems. This is why its so important to take care which fats you use to cook with. Take extra care of the things you consume on a daily basis as this builds up and compounds quickly.
Humans never ate vegatable and seed oils. THEY ARE NOT NATURAL. You can not find vegetable and seed oil in nature. They need to produced in a factory. Its disgusting, rancid and terrible for your health.
This great post from nicely shows the different cooking oils and the linoleic acid content.
