🍤🍜Gochujang prawn noodles🍤🍜
On your marks, get set… go-chujang! This Korean chilli paste is the sweet and savoury basis of our quick noodle dish
🤩Ingredients 🤩
⭐️300g frozen mixed peppers
⭐️200g sliced spring greens
⭐️4 dried egg noodle nests
⭐️465g jar of roasted red peppers in brine, drained
⭐️2 level tbsp gochujang paste
⭐️450g cooked and peeled king prawns (thawed if frozen)
⭐️Juice of 1 lemon
⭐️Chopped fresh coriander, to serve
🤩Method 🤩
⭐️Cook the mixed peppers and spring greens in a large saucepan of boiling water over a high heat for 2 minutes. Add the noodles and cook according to the pack instructions, then drain, reserving 3 tbsp of the cooking water.
⭐️At the same time, put the roasted peppers and gochujang paste in a food processor and blitz until smooth. Pour the blitzed mixture into a large non-stick frying pan, add the prawns and cook for 2 minutes over a medium heat.
⭐️Add the noodles, mixed peppers, greens, lemon juice and reserved cooking water to the prawns and sauce in the frying pan and stir well. Season to taste, divide between 4 bowls and scatter over the coriander to serve.
