Dinner last night was burger in a bowl. Just so simple to make and couldn’t be more satisfying as a Saturday night fakeaway 😋

Simply:
Shredded lettuce 🥬
Tomato 🍅
Red onion 🧅
Gherkins 🥒
5% fat beef mince 🥩
(I also like to use 100g sweet potato fries for 3.5 swips) 🍟
30g of grated Red Leicester cheese (for one healthy extra calcium choice) 🧀
1tbsp Burger Sauce for 1 swip 🍔

Mother’s Day can hold so many different emotions for so many people, so today I’m sending love to everyone who finds this day joyful, difficult, or a bit of both 💕

For me, becoming a mum was something I always dreamed of, so being able to share this day with my two children is incredibly special. I feel so fortunate and grateful every single day that I get to be their mum — especially now I’m able to show up so much better for them, 8 stone down.

At the same time, this day also carries a lot of sadness, having lost my mum, who raised me on her own and who I shared such a close bond with. I miss her deeply — not just as my mum, but also the relationship she would have had with my children. I know she would have absolutely adored them.

However you’re feeling today, I’m sending you lots of love and hugs ❤️

I previously joked that I’d “completed Slimming World” 😜 … but now I really might have!

With my husband’s support, I think I’ve actually won every award I could possibly be eligible for now 😱

This morning we were delighted to receive the Two Together Award, which made it extra special. He’s supported me throughout my journey and has also been inspired by it himself. Between us we’ve lost a combined 9st 5lbs so far! It’s been wonderful sharing this experience together — keeping each other accountable, cooking new recipes, and celebrating each other’s successes along the way. Which is exactly what this award is all about 💕

As someone who never really won anything before starting this journey, I’m still completely blown away by it all.

A huge thank you to my lovely group for your votes, and of course to our inspirational consultant who’s supported us every step of the way 💖
