An easy addition to your Iftar or Eid table.

Reshmi Malai Boti!

Ingredients:
1/2kg boneless chicken cubes
2 tbsp green chili paste
1/2 cup beaten greek yogurt
1 tbsp GG paste
1 tsp cumin powder
1/2 tsp all spices (garam masala)
1 tsp red chili powder
1/2 tsp black pepper
Olive oil spray

Instructions:
Take a bowl and add all the ingredients to it. Whisk them@up and add the chicken. Cover and put it aside for 5-6 hours or atleast 1 hour (the longer you marinate the better it is).
Once the marination time is over, take the chicken pieces and put them on a wooden skewer.
Take a grill pan brush it with olive oil spray and set it to medium flame. Now carefully place the chicken skewers on it. Keep turning sides so it cooks evenly on all sides.
Set the flame to low. Cover the grill pan with a lid and steam cook on the for 10 minutes.
Optional: Add mozzarella cheese on top. In the end give charcoal smoke.
Serve with roti/nan/paratha.

A staple in middle eastern diet! Ftayer. Presenting to you assorted ftayer tray.

Ingredients:
2 cups plain flour (+3 more)
4 tbsp sugar
2 tbsp active yeast
1/3 cup extra virgin olive oil
2 cups warm water
Salt to taste

Filling:
Homemade zaatar spice mix, feta, akkawi cheese, chicken and mozzarella.

Instructions:
Add your 2 cups flour, yeast, sugar and olive oil. Wrap in towel and set aside for 10 minutes.
Next add in remaining 3 cups flour and salt. Knead this for 10 minutes continuously. I used my to make the kneading easy.
Make small balls. Using a rolling pin flat them out to create your desired shape. Line a baking tray with parchment paper and place them in it.
Add in fillings of your choice. And brush the top with olive oil. I prepared homemade zaatar mix using oregano, thyme, roasted cumin, coriander, sumac and sesame seeds. Filled in the rest with akkawi cheese, feta, mozzarella, chicken.
Bake at 550F until golden.

Greek Gyro Chicken Platter with Tzatziki Dip!

Ingredients
750g skinless chicken breast
2 tbsp extra virgin olive oil
1 tsp Himalayan Salt
3/4 tsp freshly ground black pepper
2 tsp freshly ground garlic
3 tbsp Greek yogurt
1 tbsp. fresh Dill, finely chopped
Orzo Rice

Tzatziki Dip:
1/4 Cucumber, peeled, grated and drained to remove extra water.
1 Cup Greek yogurt
2 tsp garlic, minced
1.5 tbsp fresh Dill, chopped
Juice of half a lemon
Salt and pepper to taste
Olive oil for topping

Pickled Onions:
1/4 red onion
White vinegar, enough for them to be soaked
1 tsp honey

Instructions
Marinate the chicken with all the ingredients and refrigerate for 3 hours.
Lightly brush a grill pan with oil and grill the chicken until done.
Boil rice and set aside.
Prepare the Tzatziki by mixing all the ingredients.
For pickled onions, soak them in vinegar and honey mix for half an hour. Then drain the excess vinegar and set aside for use.
For Greek Salad, chop cucumber, cherry tomatoes and red onion. Cut the feta in small cubes. Mix all together and throw in some olives. Prepare the dressing by adding olive oil, lemon, salt, vinegar, dried oregano. Drizzle over the salad.
To arrange the platter layer rice at the bottom, top it with chicken, set the salad on the side, top with pickled onions. Serve with hummus, tzatziki dip, olives and toasted pita chips.

It's spring fever. Spring is the season of new beginnings. Fresh buds bloom, animals awaken and the earth seems to come to life again. Spring also refers to love, hope, youth and growth. This season is celebrated in almost all cultures and religions of this world. This collaboration is our way to welcome and celebrate spring as the most delightful of all the seasons.

I have made Asian Salad with Sesame Dressing.

Ingredients:

2 carrots, grated
Iceberg lettuce, quarter head, grated
1 Green bell pepper, julienne cut
1 Red bell pepper, julienne cut
1 Yellow bell pepper, julienne cut
Purple cabbage, half head, grated
100% Natural Peanut Butter
Sesame seeds and toasted Peanuts

Dressing:
1 tsp smooth peanut butter
1 tbsp rice vinegar
2 Garlic cloves, finely chopped
Half inch Ginger, fine chopped
4 tbsp Sesame oil
1 tsp Salt
1/2 tsp Black pepper
2 tbsp Honey

Instructions:

Toss all the chopped ingredients in a bowl. Whisk all the dressing ingredients and pour it over the salad. Top it with sesame seeds and toasted peanuts.

The ultimate favourite for kids and adults! PB and bananas dipped in dark chocolate.

Slice bananas and sandwich them with peanut butter. Dip and dark chocolate. Refrigerate for an hour. Done!
PS: I was at the other day picked up their own brand 100% natural peanut butter. No salt, sugar, oil or preservatives. Just perfect! Do check it out on your next visit to asda.

5 minute Gluten free and Vegan Waffles !

Ingredients
2 cups gluten free rolled oats (from )
1 cup unsweetened almond milk (vanilla flavour)
1 1/2 tsp. pure vanilla extract
2 large free range eggs
1 medium banana (ripened)
3 mejdoul dates
1 tsp Ceylon cinnamon, grounded
1 tsp. baking powder

Instructions
Add all the ingredients in a blender and blend them until completely done.
Pour enough mixture to a pre heated waffle iron
Cook on high setting for approximately 3 minutes.
Top with maple syrup and/or toppings of your choice.

Roasted Vegetable Soup! Perfect for the snow days!

Ingredients
1 large head cauliflower, washed and cut into chunks
5 large red peppers (stems and seeds removed and cut into halves)
2 tbsp extra virgin olive oil
Sea salt
Freshly ground black pepper
1 large onion diced
2 garlic cloves, minced
1/4 tsp. dried thyme
1 tsp. paprika
5 cups homemade vegetable stock

Instructions
Preheat your oven to 200 °C
Line a baking tray with baking sheet and place the cauliflower chunks and red pepper on it.
Add 1 tbsp. olive oil.
Toss in sea salt and black pepper. 
Roast for 25 minutes at 200 °C.
Once the vegetables are done, set aside.
Heat a large casserole over medium-low heat and add 1tbsp of olive oil to it.
Add onions to it and simultaneously add garlic, thyme, and paprika to it.
Cook until the onions are translucent.
Next add in the roasted vegetables, along with the vegetable stock.
Keep stirring and cook for 15 minutes. Then use a hand blender to purée the vegetables.
Top it with a dollop of coconut cream.
Enjoy on its own or freshly baked bread.

Not so guilty pasta bake! This whole serving bowl has literally 200g boiled pasta, lots of boiled vegetables and chicken. A good treat without guilt!

Ingredients
200g Boiled Pasta ( )
Boiled potatoes (mashed) as needed
Butter ( )
Sea salt
Freshly ground black pepper
500g chicken breast
1 medium onion, chopped
2 cloves garlic, chopped
Oregano
Thyme
Basil
300g Pureed Tomatoes
500g Mixed vegetables (boiled)
Cheddar and Mozzarella mixed
Egg

Instructions
Boil and mash potatoes. Add sea salt, freshly ground black pepper. Set aside
Next boiled the vegetables and set aside.
Take 2tbsp butter and add chopped garlic. Sauté. Then add onions and fry for 2 minutes.
Add in chicken and cook for 5 minutes. Mix in puréed tomatoes and cook until the water has almost dried.
Add thyme, oregano, sea salt and basil. Cook until the chicken is done. Set aside.
Now comes the layering. Brush a big deep serving bowl with butter.
Thinly layer potatoes at the bottom followed by thick layer of chicken and vegetables.
In the next step add 200g boiled pasta, sprinkle cheddar and mozzarella cheese.
The final layer is a thin layer of potatoes again. Egg wash on top and bake it at 180degree for fan oven until the top is cooked. Serve hot.

Banana bread for the chocolate lovers!

Ingredients

2 large size free range eggs ( )
1/2 cup pure maple syrup ( )
2/3 cup homemade applesauce
1 tsp vanilla essence
2 cups mashed over ripened bananas (the peel should be extra brown)
2 cups coconut flour ( )
1 tsp baking soda
1 tsp baking powder
1 tsp sea salt ( )
1/2 cup cacao powder(75% from
1 cup chocolate chips (optional)

Preheat oven to 180C.
Lightly butter grease two 8 inch pans.
Whisk egg, sugar, applesauce, vanilla, and bananas together.
Stir dry ingredients and add to the wet. Mix to combine.
Mix in the chocolate chips.
Bake for 40 minutes for two 8-inch loaves (cook until a toothpick comes out clean or with a few crumbs attached)
