Dark Chocolate Bark with Pistachios, Almond Butter and Sea Salt 🌟🌟🌟 (vegan of course!)

A great semi-healthy snack which was sooo easy and quick to make, VERY delicious, and made a fab birthday gift for my dad! πŸ’«

Here is what I did, save this for future reference!
(Just don’t tell my dad how easy it is)

1. Took 2 bars of good quality dark chocolate (I used 70%), placed on baking paper on an oven dish and put in a pre-heated oven (170 Celsius) for about 3 minutes until just starting to melt (not too much!)
2. Swirled in almond butter (you could use peanut butter of course) into the semi-melted chocolate
3. Topped with pistachios and a little good quality sea salt flakes.
4. Left to cool, then put it in the freezer to set (min 1 hour)
5. Take out freezer and smash into random pieces.
I upcycled another chocolate box to put them in to make a nice gift πŸ’

Of course you could adapt this with any toppings you fancy! Fresh or dried fruit, any sorts of nuts, coconut flakes or even pretzels could work πŸ˜‹

I’m a bit addicted to this for a savoury breakfast or brunch. It’s so delicious, wholesome and warming, perfect for this shortest day of the year 🀍

It’s also so quick and easy to easy to make:

πŸ‘‰πŸ»Add a quarter of a cup of red lentils per person to a pan along with half a cup of hot water and a good quality vegetable stock cube or a teaspoon of bullion powder.

πŸ‘‰πŸ»Cover and simmer on a low heat for 15 minutes until the lentils are almost cooked.

Add a quarter of a cup per person of oats along with whatever vegetables and herbs or spices you have to hand/ fancy. I used kale, grated carrot, a clove of minced garlic and some grated fresh turmeric.
Add more water if required, to ensure everything is covered.

πŸ‘‰πŸ»Cover and simmer for another 5 minutes and then serve straight away, I like to sprinkle on some good old nooch (nutritional yeast flakes) too πŸ˜‹

QUICK AND EASY WARMING SAVOURY PORRIDGE WITH SUPER GREENS πŸ₯¬

I love a savoury porridge now and then in place of my regular sweet porridge. This is soo easy and quick to make and is super healthy, protein filled and will keep you going until lunch!

To make one portion, add a third of a cup of oats (I prefer whole) to a pan along with cooked chickpeas (about a third or a half of a tin- drained a rinsed), and a couple of handfuls of greens of choice. I used kale and spinach. Add approx. 150ml of vegetable stock, I like to use Bullion powder. Cook on a low heat for 5 minutes until warmed through and greens are wilted, adding more water if required. Add any optional extras like garlic, chilli flakes, seaweed flakes, fresh herbs. Top with a handful of nuts or seeds to serve, I used pumpkin seeds.

I also topped mine with broccoli sprouts and some good old nooch (nutritional yeast flakes).

Green leafy vegetables are one of the healthiest things we can eat, full of beneficial vitamins, minerals, phytoestrogens, phytochemicals, and antioxidants which support our immunity, hormonal health and mental wellness amongst others.

A great source of plant proteins to keep you feeling full til lunch, and packed with fibre too, which again supports gut health, immunity and mental wellness.

I add the pumpkin seeds to ensure there are some healthy fats in there too.

πŸ” Studies show that a diet high in ultra processed or fast foods is detrimental to mental health.
πŸ₯¦ A healthy, Mediterranean style diet meanwhile promotes good mental wellbeing.

🧠 It makes sense when we think about it. We need nutrients from food for the body to be able to carry out all the functions it does, and that includes brain health, neurotransmitter production, and hormone production, which all impact how we feel mentally and emotionally. Eating a high quality, nutrient dense diet therefore benefits mental health as much as physical.

It’s pumpkin season! πŸŽƒπŸπŸ˜‹

And I have a time saving meal prep hack to share! πŸ˜ƒ

Isn’t this display at beautiful? 😍

It is sad that people only buy pumpkins to make lanterns for Halloween when they are really delicious, nutritious, and seasonal vegetable.

They don’t need to be a lot of work to prepare either. Here’s my time-saving hack. Don’t try to prepare the pumpkin when it is raw, it is really difficult to cut through. All you have to do is give it a scrub, slice it with a knife in a couple of places, and shove it in the oven (200 Celsius). I did this medium sized one morning before getting on with some work, it took an hour in the oven (that will depend on the pumpkin size). Once your pumpkin is cooked you can chop it up super easily. Keep in the fridge and add to big salads, Buddha bowls, or as a side to anything else you are eating.

Or, use it in your favourite recipe. I made this pasta by mashing cooked pumpkins with white beans, nooch, oat milk and salt and pepper, and stirring through wholewheat organic pasta, it was soo quick and easy and yummy! πŸ˜‹
