🍁 Are you ready for autumn? 🍁

🍁 I feel autumn is a perfect time to have a reset and kick start back to healthier habits after the summer months. If you feel the same you might be interested in joining me on my latest free challenge which starts on Monday! (22nd Sept).

🍁 Over the course of a week I’ll be sending participants a different mini challenge by email each day, all aimed at supporting your wellbeing through simple dietary and lifestyle changes.

🍁 Anyone can take part whether you’re pretty healthy already and just need a boost or if you’re starting out on a healthy eating journey.

Am I the only one who has over-indulged a little over the summer months? Personally I am feeling ready to get back to healthier habits and I would like to invite you to join me. Following the same successful format as my previous free challenges, let me guide you in re-setting your healthy ways.

Starting Monday 22nd September, I will send you an email every day for a week with a new mini challenge for the day, all aimed at improving your health and wellbeing through simple dietary and lifestyle changes, along with hints and tips on how to implement it. Loving my salad & herb garden that I’ve finally managed to get on the go this summer 🥰
Even if it is a bit unruly! Rocket has gone wild and I’m loving the little white flowers which are great in salads. I’ve also got lettuce, fresh sage, sorrel, lemon balm and edible flowers 🌺 🌱😋

💚VEGAN RECIPE SHARE💚

🌮Toasted Chickpea Tacos with Mango Relish🌮

My Texan friend sent me this vegan recipe to try out! The verdict: it was gooood!!

Here’s the recipe. Serves 4 for a light lunch, perfect for elfresco dining or a summer solstice celebration ☀️

🫘Make the toasted chickpeas

- In a frying pan, heat some olive or coconut oil on a medium heat.
- Open a 400g tin of chickpeas, drain and rinse under cold running water.
- Lightly fry the chickpeas along with: 1 tsp ground cumin, 1 tsp garam masala, 1/4 tsp red pepper flakes, and a pinch of salt.
- Stir frequently for 5 minutes until warmed through then set aside.

🌱 Make the tahini sauce:

- Mix in a jug: 1/3 cup tahini, 1/4 cup water, 2 tbsp finely chopped fresh coriander, 2 tbsp apple cider vinegar, 1/2 tsp red pepper flakes, 1/4 tsp fresh ground black pepper, 2 cloves garlic (minced), pinch of salt.

🥭 Make the mango relish:

- Mix in a bowl: 1/2 mango (peeled, cubed), 2 tsp cider vinegar, 2 tsp finely chopped fresh coriander, 1/4 tsp red pepper flakes, pinch of salt

🌮 Assemble your taco:

- Lightly warm tortilla wraps (gluten-free if required) under the grill or in a frying pan
- Top your wrap with the toasted chickpeas, sliced avocado, mango relish, tahini dressing and a handful of fresh coriander.
- Roll up and eat straight away. Yum yum yum! 😋

Thanks to my new followers for the follow! 😄

Thought I’d take the opportunity to update my “about me” post.

Most of my new followers have connected with me through me working as a massage therapist in Edinburgh. (Here I am working at the Meadows Festival this weekend!)
I’m also a reiki practitioner, and as you might have guessed from the name of my page, a nutritional therapist/ health coach 🍉

You can follow me for easy meal ideas, plant-based recipes, and vegan-friendly nutrition tips. Plus info and offers on things I’ve got going on. I also post a lot of personal things too especially about vegan travel! 🏝️

I mostly update this page for fun so it might not always be what you’re “supposed” to do. I prefer it that way!

My page is vegan-focused since I’m a long-term vegan myself and so are most of my nutrition clients who seek me out as a like-minded individual. But anyone is welcome of course.

I mostly work from in Edinburgh and also online with nutrition clients.

I believe we can be vegan for the animals as well as whole food plant-based for ourselves 🐮

I’m big on eating well to feel good mentally and physically, but making it easy and achievable too. One of my favourite sayings is, perfection is not the aim! (I am unlikely to say no to a slice of vegan cake if offered 😄🍰!).
