It adds lovely red colour to dishes and deep, warm, earthy flavour. πŸ₯˜

This Vegetable Brown Saffron is really simple to make. Let few strands of saffron infuse in a bit of warm water. Sautee chopped vegetables of your choice in olive oil (onion, garlic, pepper, courgette, mushrooms, carrots, sweetcorn or green beans work well), add cooked brown rice, saffron liquid, stir to warm through and serve. You can sprinkle cheese in, add beans or pieces of cooked meat or fish too. Enjoy! πŸ‘Œ

I am talking about lycopene, powerful antioxidant, that gives tomatoes its red colour. Cooking doubles lycopene levels and improves body's ability to ward off free radicals that can create oxidative stress that is linked to premature ageing, inflammatory conditions such as rheumatoid arthritis, as well as chronic disease including hear disease, diabetes 2, Alzheimer's and cancer.

Try this simple Sundried Tomato Spread/Dip. Drain a jar of sundried tomatoes and blend with fresh basil leaves, cream cheese (I used non-dairy), seasoning and squeeze of lemon juice.

Zinc is an essential mineral that not only supports immune system function, helps with wound healing, reduces inflammation but also is a part of many enzymes that we need for growth and repair and other metabolic processes.

It can be found in meats, fish, seafood, beans, wholegrains and nuts and seeds like pumpkin.

I put handful of pumpkin seeds in my porridge. You can also use them as a topping for dishes including salad and soup. They are delicious roasted too. They are also full of antioxidants, fibre and magnesium. πŸ‘
