🐸 TOAD IN THE HOLE 🐸

I’ve been missing in action on social media, but not straying away from Food Optimising - honestly it’s just back to being my way of day-to-day life so I keep forgetting to post anything 😂 that’s a good thing though!

Tonight’s dinner was toad in the hole, with cabbage, carrots, shallots and celeriac roasties 😍 yum!

I was gonna try an make some kind of cake-for-breakfast situation 🤭 but I decided to make a breakfast I’d REALLY enjoy and that would keep me full for a busy day ahead!

High-fibre wrap filled with eggs, smashed avocado, lettuce, tomato and heck sausage rashers! Lush 😍 and how lucky am I that I get to spend my birthday with the Crieff slimmers this evening?

🎁 THE GIFT OF HEALTH 🎁

Tomorrow (3rd of February) is my 27th birthday - I’ve been at this weight loss game for 9 years now! I was a target member with a 3 stone loss for a good while, then my whole life got flipped upside down in a rollercoaster of events…

I ended up gaining 6 stone (and you can imagine how that felt physically and emotionally - especially when my whole job is supporting other people to achieve sustainable weight loss!). Since then I’ve had a few false starts where my heart wasn’t really in it, and I was doing it for all the wrong reasons…

Recently I found my groove again and stepped into the new year 1st 10lb light - then I hit the “sod it” button and gained 8.5lb in three weeks… so last week I had to really ask myself HOW important it was to me, and WHY it was important to me… some of that I’ll happily share more about over the coming weeks and months - some I’ll keep to myself because I just had to make myself aware of it to take action 😉

And then I promised myself I’d just lean back into committing 100% to my own health and fitness - and just like that, I’ve lost 8lb this week 🥳 it ain’t gonna be that much every week, and I’ll be delighted with a steady 1-2lb because it’ll still get me to my happiest weight within a year.

I’ve given myself the gift of health for my birthday this year, and it’s a gift that I look forward to having for life ♥️

🥞 MAPLE AND BANANA PANCAKES 🥞

After trying the new Slimming World pancakes, I wondered how much bang for my buck I could get if I made them myself instead 🤔

Turns out you can have a whole stack (more than in one pack) for only one Healthy Extra fibre choice! As well as being a good source of fibre, these are packed with protein so will help keep me full on a busy day like today 😅

It took maybe about 30 minutes from start to finish? So if I was wanting quick and convenient I’d stick with the Slimming World shop-bought ones… but when I’m wanting to get more filling power from one Healthy Extra choice, I’ll make my own 🥳

I loooooove avocado! Smashed it with some chilli flakes, chucked it on top of a toasted wholemeal English muffin and some poached eggs - the Clarence Court Burford Browns always have such rich yolks 😍

👨‍🍳 BATCH COOKING 👨‍🍳

I’ve a busy week ahead with some travel for work planned (weather permitting 😅), and had three Slimming World Kitchen meal kits left to use up in the fridge - so I spent some time last night cooking them all and prepping for the week 🥰

All Free Food which means no weighing, measuring or counting - yes, even the pasta 😉

Chicken jalfrezi, borlotti bean bolognese and prawn noodles!

Ohhhhh this was good! Homemade toad in the hole (high-fibre and protein-rich 🥳) made with our new caramelised onion sausages 🤤

Served with roasted rainbow carrots, celeriac roasties, leeks, onions and braised savoy cabbage! The best bit? The only thing I had to count was the flour used in the Yorkshire pudding batter 😉

🐉 BEEF IN OYSTER SAUCE 🐉

Last night’s dinner from the Slimming World Kitchen was perfect - got home from group and it was ready in less than 30 minutes 😍

The best bit? None of this had to be weighed, measured or counted… not even the rice! I’ve lost over 1 and 1/2 stone in the past 10 weeks enjoying UNLIMITED Free Food!
