I love this breakfast. It’s so easy to throw together.
Warm a frying pan. (I use pans without non stick materials for obvious reasons)
Very lightly toast about a table spoon of each. You can choose your own creation but I’ve chosen on this occasion Buckwheat, quinoa, cashew nuts, Chai seeds, flax seed. Sunflower pumpkin. Pinch of sea salt or Himalayan pink salt. This always helps with the flavour.
Toast for about five minutes just to get the aroma going then I’ve turned off the heat left for a few minutes added a little little honey or maple syrup if your vegan, stir quickly Add straight to your bowl before it sticks to the pan.

You can add some fruit on top if you’d like

Tossing a variety of colorful beets in olive oil, salt, and fresh garden herbs for roasting. I also added garlic cloves and apple for extra flavor. The result is a delicious mix that’s perfect for anytime and great for leftovers.

Kale crisps
Love these crisps. A nice simple snack additive free, delicious, nourishing and very moreish!

INGREDIENTS
4 cups Kale Leaves (packed, torn into pieces)
1 tsp Sea Salt
2 tbsps Extra Virgin Olive Oil

DIRECTIONS
1. Preheat the oven to 170°C. Line a baking sheet with parchment paper.
2. Place kale leaves in a large bowl and add the salt and oil on top. Massage lightly to coat the leaves.
3. Arrange the kale across the baking sheet. Bake in the oven for 10 to 15 minutes or until crispy. Serve and enjoy!

Eat with nutrition in mind.
Chopped cabbage, chillis. Onion. Garlic. Mixed dried herbs. Parsley. Fried in good quality olive oil. Pinch sea salt and couple of twists of pepper. Poached eggs and a spoonful of kimchi. All cooked on a boat in a tiny kitchen.

What’s on my mind… Well I just put this lovely breakfast together if various nuts and seed, buckwheat and quinoa. Toasted with a little coconut oil. Added some organic blackcurrants. And a couple of slices of kiwi topped with home made coconut yogurt. While munching away on it I remembered I was in a café once and the café did not offer any vegan options. The only thing I could eat was a jacket potato with nothing on it. When I asked the server if they had anything vegan, he said “you don’t eat meat ? Good heavens what do you eat”. !!

My choices are endless.
