Vegan gluten free meal prep done ✅ nutritional yeast cheese sauce, heaps of mushrooms and cashews for protein, kale and onion in for extra veggies and brown rice pasta and only took 30 mins to prep! Ready for another week on the covid wards 😷

Happy Sunday folks! New recipe below for these super tasty Raspberry and Orange Baked Oats 🍊

Ingredients
- 40g of porridge oats
- 200g of full fat greek yoghurt
- 1 tsp of vanilla extract
- 1 orange juice and zest
- 2 medium eggs
- 50g of raspberries (I use frozen)

Method
Mix all the ingredients together in a bowl then divide into Ramekin Dishes depending on portion size.

Bake in the oven - at 180 degrees (fan ovens - 200 If not a fan oven), for 20 mins.

May require longer cooking time If you’re using larger dishes.

I re-heat these throughout the week in the microwave for about a minute and serve with fresh raspberries and greek yoghurt.
