OK 🤣 Here is one of the earliest advertisements for granola from 1893 from Kellogg’s. The wording is rather enthusiastic by modern standards. I am not entirely sure how well it would go down today 🤣 what do you think?

Even back then they were making the case for nutrient-dense food, claiming it contained three times the nutrients of the same amount of beef. Marketing has always been creative.

Granola made a comeback in the 1960s alongside the addition of dried fruits and nuts. It became closely associated with the natural foods movement and the well-known hippie health-food era. Today it has moved firmly into the mainstream and appears everywhere from cafés to supermarket shelves.

I thought I’d surprise you with an extra super awesome recipe on my website this weekend!
This baked farinata slice is one of my favourite simple chickpea flour recipes. It’s naturally vegan, oil-free, gluten-free, and incredibly versatile - perfect for lunch, snacks, or even hiking food.

I’ve been making and teaching this recipe on my plant-based retreats for many years because it’s simple, reliable, and easy to customise with colourful vegetable toppings.

Guests love creating their own designs before baking, and it always turns out beautifully.

It’s delicious:

🌿 served hot with salad and quinoa or wedges
🌿 packed cold for lunch boxes
🌿 or taken on hikes as a sturdy snack

For years I've cooked plant-based dinners for retreat groups of up to 55 people - three meals a day, whole ingredients only, no refined anything. But the beautiful thing is that the recipes I developed in those kitchens work just as beautifully for one person on a Tuesday evening as they do for a crowd.

I've just created a new page on Kind Earth where I've gathered all my favourites into one place. Curries, burgers, falafels, roast centrepieces, pasta dishes and more. All naturally gluten-free, all made from real whole ingredients.

This creamy coconut chickpea curry has been on my website since 2015 and it remains one of my most loved recipes. I've just given it a proper update and it felt like revisiting an old friend 🌿

I first made it on a meditation retreat in Seattle and it became a regular on my retreat menus after that. A few warming spices, sweet potato, mushrooms and a generous amount of chickpeas in a creamy coconut sauce. Simple, nourishing and deeply comforting.

What I love most about curries like this is how forgiving they are. Swap the vegetables, dial up the chilli, serve it with rice or quinoa. It works every time.

If you've never used whole cardamom pods before, there's a short video on the recipe page showing exactly how to use them. That little step makes a difference to the flavour.

Ready in about 25 minutes and even better the next day.

Today I thought I’d share the simple art of making raw truffles (with my super easy walnut truffles recipe)

Making raw food truffles (aka energy balls) is something that brings me great joy. I can’t think of a more versatile, satisfying, scrumptious and nutritious sweet treat. Of course, the final product does depend on what you put in them in the first place.

How the flavours excite your tastebuds is determined by the unique blend of ingredients that you choose. For me it’s pretty much an intuitive experience, encouraged by whatever I have available in my kitchen at the time.

My truffles always involve healthy fats (in the form of either nuts, seeds or coconut) along with sweet dried fruits (such as dates, figs or raisins). And then there are a vast plethora of additions that we might like to add, such as warming spices, cacao, superfood powders, lemon zest or vanilla.

The limit is your imagination.

I’ve been making these beetroot burgers for years, and they never fail to feel like a little everyday treat. Simple, nourishing and so versatile.

Made with fresh beetroot, seeds and warming spices, they work just as well hot as they do cold. I love them in a bun, tucked into a vibrant Buddha bowl, alongside roasted veg, or straight from the fridge on a picnic or hiking day.

They’re sturdy, satisfying and genuinely nourishing finger food - exactly the kind of recipe I keep coming back to.

Oh my word! I was in my element late afternoon today when I stumbled across a carpet of wild garlic growing in the woods near where I’m staying in North Wales 🏴󠁧󠁢󠁷󠁬󠁳󠁿

As soon as I got home I turned it in this seasons first batch of wild garlic & olive pate 😁✨

It’s insanely delicious on oatcakes!!!

The wild garlic season is short so I plan to forage multiple time and make enough to freeze for many months ahead.
