A little update from my garden. 🪏 For anyone who new me years ago, you’ll remember in Glastonbury I had a massive garden full of herbs and produce. After years of renting I finally have my own home again on the edge of Eryri (Snowdonia) National Park 😁 With a massive garden!
I’m starting from scratch and am beyond grateful!!!

This salad stopped people in their tracks at the retreat last weekend. 🌿

I was cooking at the beautiful Chalice Well Gardens in Glastonbury and served this alongside a French lentil cottage pie on Friday evening. Not a single spoonful was left.

Roasted butternut squash and grated raw beetroot might sound simple, but together with a creamy tahini dressing they become something really special. The contrast of soft caramelised squash against crisp earthy beetroot is just gorgeous, and that colour... that deep beetroot red is hard to ignore haha!

It is filling without being heavy, naturally sweet, and packed with goodness.

The full recipe is on my blog now, including how to make the tahini dressing from scratch. It keeps well overnight too, so it is a brilliant one to make ahead.

Home again briefly after serving lots of plant-based deliciousness to a gorgeous group over the last few days. A quick rest tonight and then I’m preparing for my next retreat in Glastonbury.

It’s like you get whisked off into another world when working on retreats, as the world outside goes quiet for a while 😁✨ I’ve been working on retreats since 2005,over 20 years now and don’t know any different 🤣

Awesome job Michelle Michelle Oliver for bringing such a lovely group of souls together… an excellent testimony of what you do. You are lovely to work with ⭐️

And thank you to Emma & Alex for being such delightful hosts Emma Mitchell - the love you put into your place makes it a joy to be there!

One of my classics. I’ve realised I don’t normally post a photo of it as it’s not very photogenic 🤣 So here it is now!

It’s a hearty feel good baked dessert made with strawberries and blackberries, with and oat seed crumble topping. The sauce is coconut and date.

If I’m serving in one of your retreats and you want this, be sure to ask me in advance before I write the menu, and I’m happy to make it 😁✨

Lunch 😁 made with love for the wonderful group with Michelle Oliver ✨ A joy to work with.

Wild garlic season is almost over but I managed to squeeze in one more batch of wild garlic tapenade, which works perfectly with oatcakes. It went down a treat.

Soul food soup, beetroot 🫜 slaw, turmeric quinoa tabbouleh, and a potato salad.

Every morsel nourishing. Totally plant-bases as always.

It’s my 2nd time Emma Mitchell - an excellent retreat venue in North Pembrokeshire in South Wales. It’s a delight to be here… and our hosts Emma & Alex are an absolute joy to work with too.

Pure joy 🙏✨ It was an absolute honour and delight to work with Jacqui from and Teresa from .and.rooted this weekend. Two of the most beautiful souls and facilitators, bringing together a truly gorgeous group.

I feel very blessed to bring this plant based cuisine, made with the biggest heart full of love to this world.
