Crispy, golden potatoes topped with zesty yogurt dressing – this side dish steals the show 😍.
Here’s what you’ll need 🛍️:
Low-calorie cooking spray
500g baby potatoes
150g fat-free natural yogurt
1 garlic clove, crushed
½ tsp mustard powder
Juice of ½ lemon
3 spring onions, finely chopped
1 tbsp finely chopped fresh chives
Here's what you’ll do 🥗:
1️⃣ Put the potatoes in a saucepan of water over a high heat. Bring to the boil, then simmer for 15 minutes, or until tender. Drain and leave to cool slightly.
2️⃣ Preheat your oven to 200°C/fan 180°C/gas 6. Spray a baking tray with low-calorie cooking spray and tip on the potatoes.
3️⃣ Using a potato masher, press down lightly to smash them. Season and bake for 25 minutes until lightly golden.
4️⃣ While they cook, mix the yogurt, garlic, mustard powder and lemon juice in a small bowl. Season to taste.
5️⃣ Let the potatoes cool for 10 minutes, then place on a platter or in a shallow bowl.
6️⃣ Spoon over the dressing and finish with spring onions and chives
