Warm Beluga lentil salad 🥗
I haven’t posted for a while, so I thought I would share this quick and easy lunch I have made recently, using canned beluga lentils I found in the cupboard and some fresh ingredients I had at home. ☺️
Beluga lentils are a great source of plant protein, fibre, vitamins and minerals, including iron, folate, magnesium and zinc. They are also delicious and easy to make!
👩🍳 What I have used:
400g can of beluga lentils
½ a sweet potato
1 medium red onion
2 tomatoes
½ yellow pepper
A few broccoli florets
2 large white mushrooms
Handful of parsley
A handful of feta cheese
Salt and pepper to taste
Olive oil for roasting
Dressing:
2 tbsp of olive oil
1 tsp of balsamic vinegar
1 tsp of fresh lemon juice
Little salt and pepper
⏲️ Method:
Preheat oven to 200°C. Peel and dice the sweet potato. Dice red onion, tomatoes, pepper, mushrooms, and together with broccoli florets, spread all the vegetables evenly on a baking tray. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 20-30 min or until tender.
Prepare dressing by mixing all the ingredients, then set aside.
Drain and rinse the canned lentils thoroughly under cold water, and just before the vegetables are ready, warm them up in a saucepan over medium/low heat, adding a splash of water to keep them moist.
Once the vegetables are ready, transfer them to a bowl, add the lentils and toss with a dressing. Add some salt and pepper to taste. You could add some more lemon juice, too. Transfer to a serving plate and sprinkle with feta cheese and fresh parsley. Enjoy! 🥰
