✨Summer 2025 recap ✨

From longer days, warm sunny weather, more times spent outdoors, day trips, family time, seasonal fruits/vegetables from mum’s garden, beautiful summer flowers, and a visit to the local farmers market, we have made the most of the summer and captured some lovely memories. 💖 Looking forward to what the next few months of this year will bring! 💫

✨Blackberry and raspberry loaf cake! ✨

Not a sugar-free or gluten-free, etc., so this one is definately an occasional treat. We have made it for the whole family as a treat to end our summer holidays and to use up the blackberries we still have in the garden.

☝️I have tweaked the original recipe we had and added some spelt and wholegrain flour instead of just using plain flour. I have also halved the sugar content and scattered some extra blackberries, as well as some raspberries we had in the freezer, to make the cake a little healthier!

🍵I had mine with a lemon balm tea, made with freshly picked lemon balm leaves from the garden and also after a protein rich meal.

💡One of my rules is to have carbs (in this case, a cake!) with a source of protein or fat to reduce a glucose spike or to consume it after a protein-rich meal rather than in isolation. I had mine after lunch; otherwise, I could have enjoyed it with a full-fat unsweetened Greek yogurt like my mum did. 😊

The recipe I have used:

Ingredients:

1 cup plain flour
1/2 cup spelt flour
1/2 cup whole grain flour
½ cup caster sugar
2 eggs
1 cup of milk (I have used full-fat unsweetened oat milk)
1 ½ tsp vanilla extract
1 tbsp baking powder
½ cup canola oil
2 cups fresh blackberries
1 cup fresh raspberries

Method:

Preheat oven to 180 °C. Grease and line a baking tray with parchment paper.

In a medium bowl, combine the baking powder and all flours together and set aside. In a separate, larger bowl, whisk together the sugar, eggs, and vanilla extract for about 3-4 minutes or until the mixture becomes light, smooth, and fluffy. Gradually add oil to the mixture, then slowly add milk and the flour mixture, whisking gently (be careful not to overmix), until fully combined.

Pour the cake batter onto a baking tray, scatter blackberries and raspberries on the top, and bake for 30-40 minutes or until a toothpick inserted comes out clean.

Let it cool before serving.

✨Take care of your skin. ✨

The skin is our largest organ and the body’s first line of defence against pathogens, toxins, UV light, etc. It also regulates body temperature, among other functions. It is also our most visible organ! And if you look after your body from the inside, it will show on the outside!

Glowing skin is healthy and hydrated skin, and diet and lifestyle play a major role in its condition. Excess intake of sugar, processed food, alcohol, caffeine, prolonged sun exposure, smoking, etc., can, over time, take its toll and result in dehydrated skin, clogged pores, or worsening skin conditions.

A balanced, varied, and nutritionally rich diet is essential for optimal skin health, and my favourite foods for radiant skin include:

🫐 Berries – berries are rich in antioxidants. Antioxidants help fight free radicals that can negatively affect the skin and accelerate the natural aging process.

🥑 Healthy fats – such as those found in nuts and seeds, avocado, olive oil, etc., help nourish the skin, promote skin hydration, and maintain skin moisture levels.

🍣 Omega 3 – found in salmon, mackerel, walnuts, chia seeds, etc., help maintain skin barrier function and reduce inflammation.

🍋 Vitamin C- rich foods – such as citrus fruits, broccoli, spinach, bell peppers, tomatoes, strawberries, etc. help boost collagen production.

🍠 Sweet potatoes – are a great source of beta carotene, which the body converts to vitamin A. Vitamin A plays a role in the growth and development of skin cells, helping to maintain smooth and even-toned skin.

I have been making this tea quite a lot recently!

In my recent post, I listed some immune-boosting foods, and one of my favourites is ginger! Something I always have in my fridge, particularly this time of the year. Ginger has been shown to have antibacterial, antiviral, anti-inflammatory, and antioxidant properties. Hence, has long been used as a home remedy to help manage symptoms of cold and flu.

I use ginger regularly in cooking, adding to smoothies or salad dressings, or making this immune-boosting ginger tea! I add cloves, honey, cinnamon, and fresh lemon juice to the tea, as they have also been found to have anti-inflammatory and antimicrobial activity, thus adding additional benefits to help manage/prevent cold and flu.

For one cup of ginger tea, I have used:

3 slices of fresh ginger (about 1 inch of ginger)
2 cloves
Half a cinnamon stick
400ml of water
Lemon and honey to taste

Method:

Add water to a saucepan and bring to a boil. Add fresh ginger, cloves, and cinnamon stick, reduce heat, and simmer for 2-3 min. Discard solid pieces, pour into a cup, and add fresh lemon juice and honey to taste. Enjoy! 🫖 💛

Some immune-boosting foods to help you stay well this winter and all year round! 🥗💚

🤧 While no food will 100% prevent you from getting a cold, flu, or other respiratory illnesses, certain foods are known for their immune-boosting properties! Thus, incorporating them into your well-balanced diet rich in whole foods, including different-coloured fruits and vegetables, whole grains, and lean proteins, and avoiding added sugar and processed foods could help you ward off symptoms more swiftly and help you stay well.

🧘‍♀️Also, getting enough quality sleep, managing stress, and getting some moderate exercise daily such as walking, swimming, yoga, dancing, etc. can all add extra benefits in keeping your immune system robust during colder months and throughout the year!

☀️ Furthermore, vitamin D plays a vital role in the normal functioning of the immune system. So, if you’re feeling tired, unmotivated, in a low mood, or often get sick, etc., it might be time to check your vitamin D levels!

🚨REMINDER: Don’t throw the pumpkins away.🎃

🎃 Pumpkins are nutrient-rich. They provide beta carotene, vitamin C, vitamin E, potassium, folate, iron, and other nutrients. Thus, they have been linked to various health benefits, including supporting the immune system, promoting healthy skin, supporting vision, regulating blood pressure, etc.

🎃They are very versatile to add to your diet and here are some ideas!

🎃 You can peel and cut the pumpkin into cubes, put them on a baking tray, drizzle with olive oil, and sprinkle with salt and pepper. Add some herbs; I have chosen cumin seeds, granulated garlic, cayenne pepper, and chopped fresh rosemary leaves. Toss all to coat. I have also added rosemary spring and whole garlic cloves for an extra flavour and aroma boost! Roast for about 30 min (200C) until pumpkin is lightly browned and cooked through. Make sure to leave some space between the cubes so they roast well.

🎃 Once cooked, transfer to a serving platter and serve immediately. Roasted pumpkin can be added to salads or enjoyed as a side dish. They can also be used instead of roasted potatoes with baked chicken, baked salmon, rack of lamb, etc. I have enjoyed mine with coconut yogurt and tahini dip/dressing. To make the dressing, I mixed 2 tbsp of sugar-free coconut yogurt with 1 tsp of tahini, fresh lemon juice, and a pinch of salt and black pepper to taste.

All sprinkled with pomegranate seeds! I hope you like it too.

One of my favourite breakfasts. 😋

Sourdough toast with mashed avocado, smoked salmon, and purple radish. Sprinkled with sprouts (a mix of alfalfa, broccoli, clover, and radish sprouts) and fresh lemon juice to taste!

This simple yet satisfying breakfast is packed with nutrients to help sustain energy and focus throughout the day.

🥑 Avocado - high in healthy fats which help lower “bad” cholesterol (LDL) and increase “good” cholesterol (HDL).

🍣 Smoked salmon – a source of protein that helps to balance blood sugar and prolongs the feeling of satiety.

🍞Sourdough bread – a source of carbs. Why do I choose sourdough bread? The sourdough fermentation process lowers the glycaemic index of this bread and makes it easier to digest than some other bread types. Fermentation also creates prebiotics, which help promote gut health by feeding beneficial bacteria.

🥙 Purple radish – radishes are a member of cruciferous vegetables, containing compounds that have been shown to have cancer-fighting properties.

🌱Sprouts – sprouts have been described as a nutrients powerhouse! They are rich in fibre and essential vitamins and minerals such as vitamin C, vitamin K, magnesium, calcium, B vitamins, vitamin A, etc. Thus, sprouts have been linked to various health benefits, including boosting immunity, supporting digestion, hormonal balance, hair, skin, and bone health.

🍋 Fresh lemon juice – for an extra dose of vitamin C! 😊💚
