Bohemia was a very popular yoga studio and cafe/bistro which specialised in delicious vegetarian/vegan food that catered for people with dietary requirements, whilst offering healthier eating options (maybe not the cakes!)

I enjoyed my time at Bohemia immensely, where I provided the catering services along with teaching all the lovely kiddos in my children's yoga classes. It was so sad when Bohemia had to close, but as one door closes, another opens - and I am so happy to now bring you my new venture - So Boho. I am already trained as a children's yoga instructor through KAY Yoga, I am now so excited to be taking my advanced training to become a 500hr qualified Yoga Instructor. I will soon be a specialist Trauma Informed Yoga Teacher and under my new venture of So Boho, I will be providing classes in Guisborough and surrounding areas which will specialise in:

1 butternut squash, 1 bag of chopped carrot & swede & 1 onion makes 3 dinners ♡♡♡

♡ Tomato, Vegetable & Oregano Soup/Sauce for pastas, pizzas, sauces or soup
♡♡ Butternut Squash, Tumeric & Butter Bean Soup
♡♡♡ Chickpea & Butternut Squash Curry
(These do not have to made all at the same time, you can prep to make for various days)

♡ Tomato, Vegetable & Oregano Soup/Sauce for pastas, pizzas, sauces or soup

Dice the butternut squash & drain the butterbeans. Dice 1/3 of a large onion & slice 3-4 garlic cloves.
Saute the onions & garlic in some olive oil with 2tsp of pesto & 1tsp of dried oregano.
Add the butternut squash and Vegetables, cook until softened.
Add 2 tins of chopped tomatoes and fill 1 empty tin with water to add to the mix.
Add 2 vegetable stockcubes
Bring to the boil then simmer.
Season well & blitz with a handheld blender.
Taste and adjust seasoning if required.

♡♡ Butternut Squash, Tumeric & Butter Bean Soup

Dice the butternut squash & drain the butterbeans. Dice 1/3 of a large onion & slice 3-4 garlic cloves.
Saute the onions & garlic in some olive oil with 1/2tsp of tumeric (optional.) Add the butternut squash and Vegetables, cook until softened.
Add 600ml of coconut milk and add 1/2 water from the empty tomato tin.
Add 3 vegetable stockcubes
Bring to the boil then simmer.
Season well & blitz with a handheld blender.
Add the drained butter beans and cook for a further 5mins
Taste and if required adjust seaoning and thinning with water if it is too thick.

♡♡♡ Chickpea & Butternut Squash Curry

Dice the butternut squash & drain the chickpeas. Thinly slice 1/3 of a large onion & press 3-4 garlic cloves.
Saute the onions & garlic in some olive oil with the following spices - 1tsp coriander, 1tsp cumin, 2tsp ginger, 1tsp paprika, 1/3tsp of chill (vary depending on how hot you like it.) Add the butternut squash and Vegetables, cook until softened
Add the drained chickpeas & 2tsp of mango chutney.
Add 400ml of coconut milk
Add the other 1/2 tin of water from the empty tomato tin
Add 2 vegetable stockcubes
Bring to the boil then simmer
Season well and add some chopped chives (if you have them.)
Taste & adjust spice as required
Serve with rice

Another great use of leftovers and bulk batch making of roasted tomatoes ♡♡♡
Grilled halloumi & red pepper salad with roasted tomatoes, served with savoury rice.
♡♡♡
HALLOUMI SALAD
Griddle sliced halloumi with red peppers & red onions, serve on a bed of salad with pine nuts (exchange items for your own preferences)

ROASTED TOMATOES
Combine cherry tomatoes with pesto and roast in the oven. Drain the juice and keep for adding as stock to other dishes. You can freeze surplus tomatoes to make sauces and add to other dishes
♡♡♡
SAVOURY RICE
I had some pre cooked plain white basmati rice leftover in the fridge along with some pre cooked vegetables (carrots & green beans) Use what items you have available. Combined in a pan, add some of the juice from the roasted tomatoes and 1/2 vegetable stock cube dissolved in boiling water. Season & heat through, serve with your salad

Delicious food made from leftovers ♡♡♡
I alway bake big batches of cherry tomatoes with pesto to freeze and use in salads and sauces. This dish made from diced leftover new potatoes placed into an ovenproof dish, couple of spoonfuls of roasted tomatoes, some leftover vegetarian bean chilli, cubes of feta & grated parmesan all baked in the oven. Served with salad ♡♡♡
