1 butternut squash, 1 bag of chopped carrot & swede & 1 onion makes 3 dinners ♡♡♡
♡ Tomato, Vegetable & Oregano Soup/Sauce for pastas, pizzas, sauces or soup
♡♡ Butternut Squash, Tumeric & Butter Bean Soup
♡♡♡ Chickpea & Butternut Squash Curry
(These do not have to made all at the same time, you can prep to make for various days)
♡ Tomato, Vegetable & Oregano Soup/Sauce for pastas, pizzas, sauces or soup
Dice the butternut squash & drain the butterbeans. Dice 1/3 of a large onion & slice 3-4 garlic cloves.
Saute the onions & garlic in some olive oil with 2tsp of pesto & 1tsp of dried oregano.
Add the butternut squash and Vegetables, cook until softened.
Add 2 tins of chopped tomatoes and fill 1 empty tin with water to add to the mix.
Add 2 vegetable stockcubes
Bring to the boil then simmer.
Season well & blitz with a handheld blender.
Taste and adjust seasoning if required.
♡♡ Butternut Squash, Tumeric & Butter Bean Soup
Dice the butternut squash & drain the butterbeans. Dice 1/3 of a large onion & slice 3-4 garlic cloves.
Saute the onions & garlic in some olive oil with 1/2tsp of tumeric (optional.) Add the butternut squash and Vegetables, cook until softened.
Add 600ml of coconut milk and add 1/2 water from the empty tomato tin.
Add 3 vegetable stockcubes
Bring to the boil then simmer.
Season well & blitz with a handheld blender.
Add the drained butter beans and cook for a further 5mins
Taste and if required adjust seaoning and thinning with water if it is too thick.
♡♡♡ Chickpea & Butternut Squash Curry
Dice the butternut squash & drain the chickpeas. Thinly slice 1/3 of a large onion & press 3-4 garlic cloves.
Saute the onions & garlic in some olive oil with the following spices - 1tsp coriander, 1tsp cumin, 2tsp ginger, 1tsp paprika, 1/3tsp of chill (vary depending on how hot you like it.) Add the butternut squash and Vegetables, cook until softened
Add the drained chickpeas & 2tsp of mango chutney.
Add 400ml of coconut milk
Add the other 1/2 tin of water from the empty tomato tin
Add 2 vegetable stockcubes
Bring to the boil then simmer
Season well and add some chopped chives (if you have them.)
Taste & adjust spice as required
Serve with rice
