Blueberry Cottage Cheese Breakfast Bake

This breakfast bake has become a family favorite in our home. The creamy cottage cheese pairs beautifully with the juicy blueberries, making it a delightful start to the day. Plus, it's so easy to whip up, and I love that it’s packed with protein!

Ingredients:

2 cups cottage cheese
2 cups fresh blueberries
3 large eggs
1/2 cup almond flour or gluten-free flour
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon cinnamon

Instructions:

1. Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
2. In a large mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, vanilla extract, baking powder, and cinnamon. Mix until well combined.
3. Gently fold in the almond flour and fresh blueberries, being careful not to crush the berries.
4. Pour the mixture into the prepared baking dish, spreading it evenly.
5. Bake for 30–35 minutes, or until the top is set and lightly golden.
6. Allow to cool for a few minutes before slicing into squares. Serve warm or at room temperature.

Yields: 6–8 servings
Prep: 10 minutes
Cook: 35 minutes
