Happy New Year my friends! For me it was terrible year, probably one on the worst years in my life and I'm happy it's gone. This date is just a symbol but I'm glad I can put 2021 in a box, lock up the box, put it on the shelf and forget about it.
For me tonight a big slice of black forest cake and a very very loud 70s rock to start new year with a better mood.

Mango nice cream with wild blackberry chia pudding. I'm glad I managed to pick up and freeze 2 big containers of wild blackberries for the winter before it started raining and they all went mouldy...
This summer wasn't lucky for foraging or growing my own food. Most of blackberries went mouldy before they even ripen. Mushrooms in the forest don't grow at all. All courgettes in my garden were rotten, cauliflower, lettuce, kale and broccoli and sunflowers all eaten by snails, slugs and caterpillars, cabbage eaten by pigeons πŸ™„ (discovery of my life: pigeons love cabbage), for cucumbers was too cold, beetroots turned out bitter and inedible in a raw form πŸ˜•

The photo is not the best because it was taken with the phone during the rain but I had to share it to say how much I enjoyed making this Midsummer Night's Dream Cake for a customer. I make cakes all the time but this one was a special one with all the toppings, the more the better πŸ˜ƒ Sweet potato chocolate fudge layered with vanilla cashew buttercream topped with gluten free vanilla and spinach sponge cake. I'm always grateful when customers request something special because it helps me develop, experiment and learn new things.

On the weekend I made lemon white chocolate bars with wild blueberries. The recipe for white chocolate is in my book but I modified it by adding lemon juice, lemon zest and fresh wild blueberries. The flavour was fantastic and that was the first time I found a significant amount of wild blueberries in the UK so I celebrated every bite of this delicious snack. The beauty of raw food is that you can change the ingredients or add anything you want to change the flavour and it still works!

Wild berry millet mouse. Millet cooked with soya milk, xylitol and vanilla. Chilled, and blended with fresh wild blueberries, blackberries and strawberries. Perfect breakfast for a berry lover!

July foraging session - edible flowers from my garden and the nearest neighbourhood ❀️😍 Swipe the photo to see the names ⬅️. I absolutely love their beauty, the variety of shape and colours. Some of them taste delicious, the other ones are not very tasty but they look great as a food garnish. In my opinion the most delicious are nasturtium and begonia. For food garnish I use the whole flowers but usually I eat only petals. Which edible flower is your favourite?

Hosta tacos! The most delicious summer meal 😍 Hosta used to be grown as a veggie before it took over our gardens as a decorative plant! Young hosta leaves are super crunchy, juicy and scrumptious. Everyday I have a fight with slugs who is gonna to eat the most delicious parts of the plant 🀣 (Flowers are edible too, I stuff them with almond ricotta, will post the photo next time when I make it)
You can use the leaves in the salad or on the sandwich but I love to stuff them because they are firm and holds the filling in place.

This time I stuffed them with:
1 Walnut and sun-dried tomato mince (walnuts, sun-dried tomatoes, fresh tomatoes, garlic, freshly ground coriander seeds, salt and pepper, blended in a food processor)
2 Guacamole (mashed avocado, garlic, lime juice, fresh coriander)
* Tomato and sweet corn salsa (chopped ripe tomato, red pepper, red onion, fresh sweet corn, black pepper)
* Coriander, lime and cucumber yogurt dressing ( soya yogurt, fresh coriander, cucumber, lime juice, salt)
Super easy to make but tastes like a meal from a very posh restaurant πŸ˜‰

Almond butter and elderflower nice cream. Just blended ripe frozen bananas, almond butter, vanilla and elderflower-infused milk and omg it tastes heavenly. Elderflowers were waiting until I come back to my kitchen. All the blossoms are very late this year because of the cold Spring.

This beautiful cake I would love to share with my dad because it was his Birthday and Father's Day a few days ago. But my dad died in May and I will never have a chance to share anything with him anymore πŸ’”. He was the person who always believed in me and supported all my decisions and I deeply feel lack of this support now. It' been a very difficult few months. I didn't take any photos for almost 3 months but it feels good to be back in my kitchen and studio. When I didn't post any photos on Instagram for a few days he always called or messaged me and asked why there aren't any new photos. He would be happy to see that I'm back ❀️❀️❀️

What's better than coffee, matcha or hot chocolate in the morning? To combine all 3 in a dessert! Almond crust with freshly roasted coffee beans, rich chocolate date cream and matcha&blue spirulina glaze. Highest energy level guaranteed!

Probably you know this problem when you need just a small amount of filling or glaze mixture but you have to make loads to fill up the blender? I use a coffee grinder blender attachment or Nutribullet to blend small amounts but it still may be too much. For the cake I made last week I needed only about 1/3 of a cup of the cherry cream filling but I had to make a whole cup to be able to blend it smoothly. I used the leftover mixture for the 'doughnuts'. I made the chocolate shells, filled them with the cherry cream and topped with the almond butter. And here you go a 5-minute delicious dessert!
