Hosta tacos! The most delicious summer meal π Hosta used to be grown as a veggie before it took over our gardens as a decorative plant! Young hosta leaves are super crunchy, juicy and scrumptious. Everyday I have a fight with slugs who is gonna to eat the most delicious parts of the plant π€£ (Flowers are edible too, I stuff them with almond ricotta, will post the photo next time when I make it)
You can use the leaves in the salad or on the sandwich but I love to stuff them because they are firm and holds the filling in place.

This time I stuffed them with:
1 Walnut and sun-dried tomato mince (walnuts, sun-dried tomatoes, fresh tomatoes, garlic, freshly ground coriander seeds, salt and pepper, blended in a food processor)
2 Guacamole (mashed avocado, garlic, lime juice, fresh coriander)
* Tomato and sweet corn salsa (chopped ripe tomato, red pepper, red onion, fresh sweet corn, black pepper)
* Coriander, lime and cucumber yogurt dressing ( soya yogurt, fresh coriander, cucumber, lime juice, salt)
Super easy to make but tastes like a meal from a very posh restaurant π
