Beef casserole prepared on Sunday. Slow cooked today.... so tried i couldn't be bothered to do more vegetables.

So my plan seems to be working 💪

Oh this has turned out well.

Mashed new potato case. With danish blue cheese and vegetable filling.

Boil new potatoes till soft and mash in tin that is sprayed with fry light and grease proof paper and cook till browned.

Cook off vegetables, sliced red onion, pepper and mushrooms 🍄

Then in a bowl. mix 10 eggs 🥚, 60g Danish blue cheese 🧀 and 55g Seriously strong light spreadable cheese, salt and pepper. Add cooked vegetable.

Then add to browned case and cook till set .
