Its become a bit of a ritual in the last few years for me to make a batch of Jam or Jelly on or around the Solstices and Equinoxes, using the best of whats growing, blooming or fruiting in my garden. So here is my latest one for this super potent Summer Solstice period...Blackcurrant and Rose petal jam. I used 1lb of fresh Blackcurrants, simmered in 1 pint of water, took of the heat, mashed the Blackcurrants then strained through a muslin bag, added the petals of 4 Roses (the old Apothecary Roses are perfect, I used a variety of Rosa gallica), whizzed them into the hot jammy liquid with a wand thingy ( I couldnt bring myself to just infuse them and remove them at any point!) , put back on the heat with a cup and a half of sugar, boiled until setting point, then bottled them up....
