Common Sea Urchin 🐑😁🌊

This Sea Urchin is the one most commonly seen in the UK's rock pools. It can grow to be quite large and round, and has short string pinky spines.

Though is is technically edible, it's Classified as Near Threatened on the IUCN Red List, so not one for us to eat here in the UK. The scientific name scientific name "Echinus" comes from the Greek word for hedgehog πŸ¦” a good reason not to go barefoot in the rock pools on very low tides without taking a good look where you're standing πŸ€—

Wild Fennel is a tall plant, usually less than 2.5m in height, with bright green feathery leaves and a hollow stem. Wild Fennel has small yellow flowers 🌟 and a strong anise πŸ‘ƒaroma 😍

Can be seen growing in long grasses and most commonly coastally but can be seen inland too πŸ€—πŸŒŠπŸŒΏ

Great to use in teas 🍡 and in seafood dishes 🦞

Just having a little look at this little lobster 🦞 found along the rock pools of Robin Hood's Bay recently while collecting seaweeds 🌿

Always nice to see 😍 this little guy, a young male, got hidden away safely back under his rock for the high tide to sweep him back out to sea 🌊🦞😍

Yarrow 🌼🌿🌼

Yarrow is a great plant to use! The young leaves and flowers in salads and the older leaves similarly to rosemary/parsley It has distinct feathery leaves, often hidden in long grass.

The flowers are usually white or pink and have a lovely scent πŸ₯°

The Mussel is a familiar sight on shores all around the UK and is a favourite food of people as well as seabirds πŸ¦…πŸŒŠ

If you're collecting them to eat, Mussels in the UK should only be collected on clean beaches (I use the Safer Seas and Rivers app) and only on months ending in -ER. These Mussels should be a minimum of 50mm in length.

Be aware that these mussels have beards πŸ§” which can be pulled off with your fingers prior to cooking πŸ˜‹ it looks like wiry hairs which are not nice to eat, but can be easily removed.

Wild Sweet Pea βœŒοΈπŸ’šπŸ₯—

Coming to the end of their season, there are still some Wild Sweet Peas in flower out and about in the hedgerows. The curly tendrils at the end of the leaves are they key identifier here, with flowers ranging from pinks to purples, they have a lovely fresh pea taste, and work brilliantly with salads πŸ˜‹πŸ₯—

The flowers are probably the tastiest part, being a little sweeter than the leaf, but both great for snacking on while you;re pottering round 😎

Goats cheese, caramelised red onion and Elderberry Tart πŸ‘πŸπŸ«πŸ₯

This easy cheats tart was eaten on our recent Introduction to Autumn Foraging Course 😍

Ingredients:

- Shop bought Puff Pastry
- Elderberries
- Caramelised Onion Chutney
- Soft Goats Cheese
- Egg wash
- Thyme

Method:

- Roll out puff pastry to desired size and fold edges to make a parcel
- Spread chutney in the middle and sprinkle liberally with Elderberries
- Sprinkle Goats Cheese on top along with thyme
- Spread whisked egg on the corners of the pastry
- into a preheated oven at 200c for 14 mins and enjoy!
