Despite its growing enterprise both in the UK and overseas, the business remains family-owned and focused on its ethical approach to food production. Back to Basics – Episode 1: Shortcrust Pastry 🥧

We’re starting our Back-to-Basics series with a true kitchen essential — simple, reliable shortcrust pastry.

Whether you’re making a savoury quiche or a sweet tart, mastering this classic recipe is the perfect place to begin. With just a handful of ingredients, it’s all about technique, patience, and enjoying the process.

𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔
200g Doves Farm Organic Plain White Flour
Pinch of salt
100g butter
7–9 tbsp cold water
Butter, for dish
Flour, for dusting

𝑴𝒆𝒕𝒉𝒐𝒅

180°C, Fan 160°C, 350°F, Gas 4
1. Pre-heat the oven.
2. Rub a little butter around the inside of your dish or tin.
3. Measure the flour into a mixing bowl and add a pinch of salt if you are making a savoury recipe.
4. Chop the butter into small cubes and add to the bowl.
5. Using a fork or pastry blender, work the butter into the flour until the mixture resembles breadcrumbs.
6. Stir in enough cold water to bring the mixture together into a soft dough.
7. Using your hands, gather into a smooth ball of pastry.
8. Lightly flour your work surface, place the dough in the centre and dust with flour.
9. Roll out into a circle around 5cm/2 inch larger than your dish and gently lift into place or press into the dish using your fingers.
10. Trim away any excess pastry from the edges.
11. Continue as per your chosen recipe.

Here are some of our tried-and-tested favourites:

✨ Gather all your ingredients before you start - it makes the process smoother and more enjoyable
✨ Weigh and measure accurately for consistent results
✨ Bake in a warm, draught-free kitchen to help your dough rise beautifully
✨ Avoid adding extra flour when kneading unless absolutely necessary
✨ For sticky or enriched doughs, try lifting and folding with a pastry scraper
✨ Cover your dough with an upturned bowl to create the perfect proving environment
✨ Letting your dough rise overnight or in the fridge can improve flavour and texture
✨ Check your loaf is baked by tapping the base - it should sound hollow
