Today is Shrove Tuesday or as most people know it....Pancake Day π₯π₯ So Happy Pancake Day everybody ππ₯ππ§‘
Pancakes take only minutes to prepare and can be a great, healthy way to start your day, especially when made with protein! π²π. It is well documented that people who include protein at breakfast have better appetite control throughout the day and finishing your day with protein and good fats, help supply your body with the nutrients it needs to repair and grow while you sleep πͺ......a win win for the protein pancake! π₯π.ππ§‘
So not only are they a great way to start your day, they are also a great way to finish your day πβ¦ oh theyβre also a great, quick, healthy snack for when the kids get home school today....or any day! πππ§‘
Hereβs a simple recipe for healthy Protein Pancakes without added sugars or refined grains, with a Gluten Free option π₯ππ
For Gluten Free, use GF oats
Recipe (makes 4 pancakes)
Ingredients
40g Whey protein powder (your choice of flavour)
100ml Milk (your choice of milk, we use Almond)
1 large free-range egg
50g Organic porridge oats
1 tsp cinnamon
ΒΌ tsp baking powder
1 tsp Coconut oil
100g Greek yogurt
50g Blueberries
Method
1 Add the oats to a blender and blitz until it resembles a fine flour. Add the protein powder, baking powder, egg, milk and cinnamon to the blender too and blitz everything until you have a texture like pancake batter.
2 Heat a frying pan over medium-high heat and add enough oil to lightly grease the pan, approximately 1 tsp. to start (you will add more as needed for more pancakes).
3. Once the oil is hot, pour 1/4 of the pancake mixture into the centre of the pan. Tilt the pan in a circular motion so that the batter coats the surface evenly.
4 . Allow to cook for 1-2 minutes, or until the edges start to harden and a spatula can easily slide underneath the pancake.
Flip over and cook an additional 1-2 minutes, or until the batter is cooked through.
Repeat with remaining pancakes.
For an extra hit of protein, Fibre, Antioxidants, and enjoyment ππ, serve with some more 'Gut Healthy' plain Greek yogurt and fresh berries of your choice π₯π«πππ
