Here are the details for my 7-day, 40 fruit & veg challenge.
THE AIM:
Eat 40 different fruit & veg over 7 days.
WHAT COUNTS:
Fresh and frozen fruit and veg.
Vegetables in jars (e.g. preserved in water or brine).
WHAT DOESN'T COUNT:
Potatoes or sweet potatoes.
Lentils, chickpeas and beans.
Herbs and spices.
HOW IT WORKS:
• 1 portion = 1 count
• A portion is roughly 80g (don’t overthink it — garlic and chilli will naturally be smaller)
• Repeats don’t count twice, but it’s absolutely fine to repeat foods
• Aim for no more than 2 fruits per day
• No judgement. No failure. Just a bit of fun.
IMPORTANT BIT
This isn’t about eating only fruit and veg.
Please keep eating your usual meals, including protein, carbs and fats - this challenge is simply about adding more fruit & veg alongside what you already eat. It’s a chance to try different vegetables and check out new recipes!
