🥒 Slimming World Friendly Airfryer Courgette (Zucchini) Sticks
✅ Syn-Free (or very low syn depending on ingredients)
Makes 2 servings
⭐ Ingredients ⭐ :
2 medium courgettes (zucchini), sliced into sticks
1 egg, beaten
40g grated reduced-fat hard cheese (e.g. reduced-fat cheddar or Parmesan) — use as part of your Healthy Extra A
4 tbsp wholemeal breadcrumbs (approx. 2 syns) (or use blitzed wholemeal bread from your Healthy Extra B for syn-free option)
1 tsp garlic granules
1/2 tsp paprika (optional)
Salt and black pepper
Low-calorie cooking spray (e.g. Frylight)
🔪 Instructions:
1. Prep the courgette:
Cut the courgettes into finger-sized sticks.
Pat dry with a paper towel to reduce moisture.
2. Prepare breading:
In one bowl: beat the egg.
In another bowl: mix breadcrumbs, grated cheese, garlic granules, paprika, salt, and pepper.
3. Coat the sticks:
Dip each courgette stick into the egg, then roll in the breadcrumb-cheese mix to coat.
4. Air fry:
Preheat air fryer to 200°C (400°F).
Lightly spray the basket with low-calorie spray.
Place the sticks in a single layer (work in batches if needed).
Spray the tops lightly with low-cal spray.
Air fry for 8–10 minutes, turning halfway through, until golden and crispy.
🍛 Serving Suggestions 🍛:
Serve with fat-free Greek yogurt mixed with lemon juice and herbs as a dip.
Or with sugar-free passata seasoned with herbs as a marinara-style sauce.
🔁 Syn Notes:
Use wholemeal bread from Healthy Extra B = syn-free.
If not using HEXB, 1 slice wholemeal bread ≈ 3–4 syns.
40g reduced-fat cheese = Healthy Extra A.
