Cooking with Lion's Mane mushrooms....

Some of you have asked so I am sharing a few of the recipes I have tried so far.

I followed the recipe on the packaging (pix 4 & 5). It went really well with steak and veg & also with veggie burgers...

I used it in a mung bean beef stew instead of our usual - shiitake mushrooms (pix 1 & 2). Made with mung beans, beef, carrots, potato, red onion, garlic, red pepper, usually celery too but was OOS, spices: garam masala, coriander, cumin, turmeric, ginger, salt, chilli.

And I made lion's mane ginger egg drop soup/broth following a recipe I found on YouTube 'How to cook egg drop Lion's Mane mushroom soup' which didn't look that appetising, but was really nourishing, warming and delicious.

- pistachios
- buckwheat groats
- extra virgin coconut oil
- dates
- cinnamon

Homemade chocolate on top (raw cacao, coconut oil and splash of maple syrup).

That's it!

I love to mix up my breakfasts to keep things interesting and to benefit my gut microbiome.
This new favorite recipe came together when I was using up some cupboard staples.

It is:
- incredibly easy to make - just mix it all together and leave in the fridge overnight
- portable - make it in a jar
- delicious
- high in protein - I add collagen powder for an extra protein boost!

Ingredients: almond flour, h**p seeds, chia seeds, flaxseed, desiccated coconut, cinnamon, almond or coconut milk - I like
Optional: raw cacao powder, vanilla extract
+ collagen powder - I like &

Top up with berries of your choice and pomegranate seeds. I don't have to tell you those are good for you!

Have you tried chicken spleen yet?
We picked up some delicious meat and organ meats from over the weekend.
Last nights dinner: Chicken spleen and liver.
Like other organic meats, they contain a variety of nutrients and are generally a good source of protein, vitamins (A, B12, B2, folate) and minerals (iron, zinc, copper, selenium).
They contain CoQ10, an antioxidant important for energy production. And choline, important for brain health and nerve function.
