Pizza - but with a fraction of the calories!!! ✅

A few people have contacted me for this recipe so here it is:






For the base……
I cup of red lentils
2 cups water
1 veg stock cube

Put together in a large bowl and soak overnight then blitz.

To cook add 1 x ladle to a cold non stick pan. Add 3 egg whites and mix. Then add heat, cook the first side until you can flip it. Once flipped add toppings.

For the sauce….
Tomato purée
Italian herbs
Splash of soy sauce

Other things could be added like garlic and chilli.

Add toppings of your choice along with a little reduced fat cheese.

Especially as the weather is beginning to turn a little colder…. Nothing beats sausage and mash which I can eat and still hit my goals.

Vegan Sausage and apple tray bake

Quick and easy tray bake. Place everything together and roast in the oven.
Ingredients:
Sausages (I used .uk )
Vine 🍅tomatoes
Sliced apple
Sliced onion
Veg stock cube
A little water
Sea salt

Easy egg fried rice (lower fat)

Easy, quick and simple. Enough for 3 portions

Pre cooked basmati rice
(50g dried weight per portion)
Veggie bacon
(I used .uk lardons)
4 eggs
Spring onions
Soy sauce
Chinese five spice (optional)

Use a non Stick pan (no oil required)

Combine all the ingredients together until rice is piping hot and eggs cooked though.

Can be eaten hot or cold. Other veg can be added to your taste.

Quick tomato basil risotto (lower fat)

Use 1/2 portion of my tomato basil soup (see previous post or DM for recipe) and 1/2 portion pre cooked rice (swipe to see the full portions>>)

Pop in a non stick pan together with some grated reduced fat cheese and lots of raw spinach leaves.

Heat these together until rice is piping hot and everything is combined. Add seasoning to taste.

Rhubarb crumble with lower fat custard

There is loads of rhubarb around at the moment. Here is a great way to use some up without feeling guilt.

Cut up the rhubarb into inch ish sized pieces and stew. Lay into an oven tray once drained (save the rhubarb water - can be made into jelly)

Make the crumble to lay on top with: flour (wholemeal of poss), brown sugar and butter. crumble together with fingers ( you could also use oats or go half and half)

While the crumble is finishing in the oven make your low fat custard.

Put all these in a cold pan together:
4 x egg yolk
2 x tblsp brown sugar
Tblsp flour
3 tblsp dried skimmed milk powder
Few drops of vanilla essence or from a pod
1l skimmed milk

Now turn on the heat and continually whisk until it thickens (it will)

Serve and enjoy. I love this custard, easy to make and goes with anything.

Tomato and goats cheese gnocchi

I cannot take the credit for this recipe as I was given a ‘Gousto’ box by a friend.

I didn’t use a generous drizzle of olive oil and instead simmered the tomatoes in a little water. That reduces the fat and calorie content.

Rhubarb crumble with homemade lower fat custard…

Simple and delicious….

Cut the rhubarb into 1inch (ish) parts and lightly stew with a little water and brown sugar.

Make a crumble using flour, butter (I used ) and brown sugar. Use finger tips to bring the mixture together into a crumble.

Layer the rhubarb while it’s warm then top with crumble. Finish off in oven or under grill.

For the custard:
5 egg yolks
2 big tblsp milk powder
Brown sugar
Vanilla flavdrops (optional)
2 big tblsp flour
1ltr skimmed milk

All in pan together and whisk. Add heat and continue to whisk until thick.
