✨Happy Easter from the enchanted forests of Garfagnana Italy! 🤍Spring gives new energy to our minds and bodies enabling us to be truly thankful for who we are, right here and now. After the reflection of winter, spring is a time for planning, planting and setting intentions. It’s a time to begin again, nature’s new year. 🕊️The spring equinox honors the fertility of earth and celebrates growth, balance, and rejuvenation. 🌱Spend time soaking up nature’s vitality and positivity and planning a time for a spring cleanse. 🌱🌿☘️May the foraging begin!

✨Today some of us choose to celebrate love 🤍now that can’t be a bad thing if we can manage to see it in its simplicity. 💕We all need to give ourselves much more love and respect; to stop criticizing ourselves harshly and allowing us to simply be. There is so much more to us that is trying to blossom 🌸. So maybe as spring approaches and the songbirds notch up their repertoire we could take a day to ourselves and sing our own love songs just for us. 🍃Let’s prepare for our spring blossoming so we can offer back to the world some love that it desperately needs. And that may include some date & cardamom treats or a saffron & rose petal tea!!

✨It’s always a good time for mung pancakes! 🤍These are so easy to make and are a great alternative to egg. 🍃Experiment with flavours. I always start with spring onions and lots of fresh or frozen dill. 🌱But spinach, nettle and seaweed are my favourite mineral rich additions providing an iron and iodine boost. ✨Mung has a detoxifying action which can really help us prepare the body for this change of season. 🍂You can find the recipe here https://karensilverwood.co.uk/wp-content/uploads/2024/05/Savoury-Dishes-new.pdf.

✨Another ‘around the kitchen table’ workshop done on the theme of women’s wellbeing. 🤍Lots of positive sharing from our lovely group of ladies. 🥀We made a h**p, cardamon & rose smoothie, a herbal woman’s balance tea and mung pancakes packed with dill, nettle and seaweed 🍃. All deliciously appreciated with plenty of inspiration from mother nature to help us stay well through our major life changes✨.

✨I love the promise and abundance of this time of year! 🌱The end of summer holidays can be melancholic however nature is giving us her fruits and vegetables in amounts we can barely process. 🤍And for many it is the start of a new academic year with promise and expectation. 🌿I came home from my summer holiday to find this dandelion growing right outside my front door. ✨A wise old herbalist (can’t remember which one!) said that “nature gives you the plant you need and puts it so close to you so you’ll see it”. Well that’s exactly what’s happened while I was away. 🍃Who doesn’t need a bit of gentle liver detox after a holiday and at the start of an academic term when everyone brings their germs to share with us in overcrowded classrooms!? What’s growing outside your door?🌱

🌼Loving the summer flowering herbs🌼
Everywhere I look there are herbs displaying beautiful colours and releasing their fragrance, attracting our precious bees. 🐝 Borage honey is one of my faves. 🍃Borage, marigold & nasturtium flowers make colourful & tasty additions to salads. 🌱In herbalism we use the flowers, leaves and seeds of borage. 🌿The latter are an excellent source of gamma linoleum acid (GLA) a very important supplement to help reduce inflammation, support the heart and balance hormones. 🤍Borage will lift the spirits to help anyone suffering with sadness, anxiety or low energy. It is an emotional cleanser and re-balancer. Rich in minerals and moistening for lung conditions too. ✨It’s best to seek professional advice before taking borage if you are taking anti coagulant medicine.
💚Fresh is best so get munching those nutty flavoured flowers while they last! 💚.

✨It’s a very short lived berry season here in the UK. 🌿They are bursting with antioxidants which help lower inflammation and protect against chronic diseases but they also stimulate new collagen production as well as protect your existing collagen which leads to younger looking skin. 🍃Again we see Mother Nature gives us a natural skin protector just when the sun is out more. (Unfortunately we can’t say that in the UK right now!)
🤍Raspberries, blackberries and cherries belong to the rose family making them also good for the heart (their shape and colour tell us that too). 🍃Blackcurrants are really high in vitamin C and are amazing for curing sore throats.
🌿Shame their fruiting season is soooooo short and the birds can eat them before we do. ✨Now’s the time to freeze them, make syrups and vinegars for winter use.
🤍And for those who can cope with a bit of sugar and even alcohol, you can make jams as well as liqueurs like cassis.
