I am occasionally asked why I strongly recommend the use of butter over margarine. There are many reasons but the most important reason is that we were persuaded to switch to margarine because butter was allegedly causing heart disease and heart attacks. That was a lie but the majority of people, including doctors, still believe it. The same goes for saturated fat which is always described as "artery clogging saturated fat". Another reason for liking butter on vegetables is that vitamins A,D,E and K need to be transported with fat to improve their availability to the body. This recent post from 'Green Med Info' goes into the demonization of butter and saturated fat which started around 100 years ago but increased in 1955 when Ancel Keys first suggested that cholesterol caused heart attacks and saturated fat raised cholesterol. This hypothesis was never proven despite years of trying but the nutritional guidelines of USA and the UK were changed in 1977 and 1983 respectively to encourage the switch from fats to carbohydrates as our main fuel. The rest, as they say, is history. Obesity started to rise as did cases of diabetes. Over 50% of Americans are now obese and we are not far behind them. So I repeat my recommendation that we load up on butter, meat, fish, eggs, cheese and all the other things that contain fats and proteins and start to reduce carb intake for the sake of our health and our waistlines.
