When we see every meal as an opportunity to build up our nutrition armour of defence. We spend more time understanding what we are putting in our bodies for it's good health.

We ask, is this food helping or harming me?

On the whole let's aim to cover ourselves with a healthy nutritional support system for immunity including :

GOAN FISH CURRY 🍲

Oily fish like salmon, contains anti inflammatory omega3. Brilliant for gut, brain, eye and skin health.
I love this recipe because it is simple to make, but, full of flavour. Perfect for a Friday night in with friends.

Easy
Serves : 4

INGREDIENTS :

- 3 cloves garlic, finely chopped
- 3cm ginger, finely chopped
- 1 green chilli, deseeded and finely chopped
- 2 tomatoes, chopped
- 1 tsp coconut oil
- 1 can of coconut milk
- 1 small red onion, finely chopped
- 2 tbsp garam masala
- 2 tbsp ground cumin
- 1 tbsp ground turmeric
- 500g salmon steaks, scales removed
- Juice of half a lime
- ½ bunch coriander leaves, roughly chopped

METHOD :

STEP 1 :

In a large heavy based saucepan add coconut oil, all to heat for 1 min. Next fry the onion over a medium heat stirring frequently until soft. Stir in chilli, garlic, ginger, ground spices then cook for approx 1 min.

STEP 2 :

Pour in the coconut milk, chopped tomatoes, stock or water then bring to the boil. Reduce the heat to the lowest setting and simmer for 5 mins.

STEP 3 :

Add the salmon steaks and continue to simmer stirring occasionally and taking care not to break the fish pieces. Cook for about 7 mins until the fish is cooked through.

STEP 4 :

Season to taste and stir in the lime juice. Sprinkle over the coriander leaves.

STEP 5 :

Serve with rice or cauliflower rice.

THE PLANK POSE

⚡ A hard exercise ⚡

It takes a lot of determination at the beginning staying in correct hold.

The plank is designed to focus on tightening abdominal and back muscles.

How to :

1- Lay on the floor with the elbows under each shoulder. Forearms should be flat on the mat. Whilst engaging the abdominal muscles.

2- Keep forearms and knees on the mat.

3- Slowly lift the body upwards until the stomach muscles are parallel to the floor.

Both forearms and tip toes will be touching the mat.

4- Breathe as deeply as possible whilst holding this pose.

In MS, balance can deteriorate creating high risk of falling.
By maintaining abdominal muscle strength we can preserve balance.

When I do this I'm visualising my new 6 pack.

I like to select anti inflammatory recipes.

Avoiding inflammation will keep our internal organs as healthy as possible.

This soup is a good comforting choice.

Rich in vitamins, minerals and antioxidants, pumpkin is incredibly nutritious.

INGREDIENTS 🥣

- 1 medium pumpkin (approx. 1½kg)

- 1 tbsp olive oil

- ½ tsp ground cumin

- 1 tsp chili flakes

- 1 large onion, finely chopped

- 2 garlic cloves, crushed

- 1 litre vegetable stock

- 1 can coconut milk

- 1 lime, zested and juiced

- ½ small bunch of coriander, chopped (optional)

METHOD 🍽️

1- Heat the oven to 200C/180C fan. Peel, deseed and chop the pumpkin into 3cm chunks. Arrange the pumpkin on a baking tray, drizzle over half the oil, scatter with the cumin and toss well. Season and roast for 30 mins.

2- Heat the remaining oil in a large saucepan on a medium heat. Fry the onion for 5 mins until soft, but, not golden. Add the ginger, garlic and chili flakes and fry for another minute.

3- Add vegan stock, coconut milk and roasted pumpkin to the pan, then bring to a gentle simmer.

4- Remove from the heat and blend the soup with a blender until smooth.

💡NB: If you prefer a thinner soup, add a cup of hot water to reach the required consistency.

5- Return the soup back to a gentle simmer. Then season well and stir in the lime juice.

Ladle into serving bowls topping with pumpkin seeds, coriander and salt and pepper as desired. Add a few slices of bread on the side.

We are living in probably the hardest times financially since the 2nd World War.

We are all feeling the economic pinch globally right now.

Our community spirit is imperative more than ever. 

This resilient togetherness is the most powerful thing we have.

We cannot let world events overwhelm us though. 

As soon as we awake a brand new day has started.

We can stay aware of news events, without, it depleting our energy levels.

By always having something uplifting to look forward to.

By having a list of fun low cost stuff to do.

When life gives us lemons, we must show it we will keep our levels high.

We will :

- SMILE MORE
- LAUGH MORE
- CREATE MORE

- Street markets
- Parks
- Art galleries

- Board games

Grab a packed lunch and squeeze the very most out of life.

At this time of year traditionally house keepers would ensure there was enough food to last until springtime.

Today for convenience there is a grocery store or two on almost every single High Street.

It’s useful to know some of the old hacks on how to keep food fresher for longer.

It’s all important for our wellbeing knowing :

1- We are being sustainable
2- We are wasting as little food as possible

Here are a few everyday food hacks we like :

- SOFT CHEESE

Feta, gorgonzola and mozzarella can be preserved in a salt water solution.  Using an airtight container, completely submerge the cheese in the salt water solution. Cover with a snap shut lid and store in the fridge for up to 3 months.

- EGGS

Duck or hen eggs can be frozen by cracking them open individually into a silicone mould tray.
They can last for up to 1 year in the freezer.

- FLOUR

Tip a bag of flour and 3 -4 bay leaves into a glass jar.  This will prevent bugs from soiling the flour. When stored in a cool dry location it will last for 1 year.

- POTATO

Potato can be stored in a brown paper bag in a cool dark place. By adding a few whole apples to prevent them spouting. They can last up to 3 months.

- HONEY

Pure raw honey has been known to stay fresh for more than 100 years.  Longer than most humans! 

Again is must be stored in a cold dark space.

To influence what we attract into our lives let’s examine a few key areas.
As our SIGNATURE STYLE will reflect in everything we choose.

OUR FRIENDS 💃🏽🕺🏽

Echoing a recent post, we are an average of the 5 people we hangout with the most. Therefore, are our friends reflecting who we are and who we want to be?

OUR WARDROBE 👔👗

Does our wardrobe make it easy to get dressed quickly?

What are our regular everyday outfit choices?

Do we dress in sync with our signature style?

OUR FOOD 🍜🥗

Do we eat healthy meals often?

Do we eat randomly
i.e. grab and go fast food?

Do we eat at the right times?
i.e. do we need to have dinner earlier so we can sleep on time.

OUR DRINK 🍹🥛

How much water do we drink per day?

Are our drinks caffeinated or calming?

Do our drinks support a lifestyle we actually want?

One thing at a time, of course. Still, to evolve in the ways we want, we may need to UPGRADE something in our lives.

Now I ask, will I hurt more than the other person I would seek revenge against?

So is it really worth it?

NO – of course NOT.

Only do things if the outlook is going to be positive.
