😋 Potatoes Gratin 👇

🟡 Ingredients

▢ ¼ cup butter (unsalted)

▢ 1 medium onion (chopped)

▢ 3 cloves garlic (minced)

▢ ¼ cup all-purpose flour

▢ 1 cup chicken broth (low sodium or no sodium added)

▢ 2 cups whole milk (or half and half)

▢ ½ teaspoon salt (or to taste)

▢ ½ teaspoon pepper (or to taste)

▢ 1 tablespoon fresh thyme (chopped, for garnish)

▢ 3 pounds potatoes (sliced into ⅛-inch rounds, I prefer Yukon Gold)

▢ 2 cups white cheddar cheese (freshly grated)

▢ ½ cup Parmesan cheese (freshly grated)

🟡 Instructions

1. Preheat the oven: Preheat the oven to 350°F. Lightly spray a 9×13-inch casserole dish with cooking spray.

2. Sauté onion and garlic: In a medium size skillet, melt the butter over medium low heat. Add the onion and garlic and cook for about 3 minutes until softened. Sprinkle the flour over the onion and garlic and stir. Cook for 2 more minutes.

3. Make the sauce: Slowly add the chicken broth and milk while continuously whisking to thicken. Whisk until smooth. Bring to a boil over medium heat while continuing to whisk. Season with salt and pepper.

4. Layer the ingredients: Layer about a pound of the potato slices on the bottom of the prepared casserole dish. Top evenly with ⅓ of the sauce and about ½ cup of cheddar cheese. Repeat with another layer of potatoes, ⅓ of the sauce, and ½ cup of cheddar, the rest of the potatoes, remaining sauce, remaining cheese and finally the Parmesan cheese.

5. Bake: Cover the casserole dish with aluminum foil and bake for about 45 minutes. Remove the aluminum foil and bake for an additional 45 minutes or until golden brown and the potatoes are fork tender. If needed, broil for a couple minutes until golden brown to your preference.

6. Garnish and serve: Garnish with fresh chopped thyme and serve with your favorite meat dish.

😋 Strawberry Ice Cream (No Churn) 👇

🔴 Ingredients

▢ 1 kg / 2 lb strawberries , ripe, hulled and halved

▢ 1 tbsp white sugar

▢ 1 tsp vanilla extract (optional)

▢ 1 can sweetened condensed milk (395g / 13 oz)

▢ 2 cups / 500 ml cream , full fat, for whipping (Note 1)

🔴 Instructions

▪ ROAST STRAWBERRIES:

1. Preheat oven to 160°C/320°F (140°C fan) with shelf in the middle.

2. Pile strawberries on a tray. Sprinkle over sugar. Toss through, then spread strawberries out on tray.

3. Roast for 45 minutes, rotating tray halfway. Remove from oven, toss strawberries, then return to oven for 15 minutes. Keep an eye on it - don't want juices to become toffee and stick to tray.

4. Remove from oven, use spatula to scrape into a food processor, being sure to get all the juices and caramelised bits off the tray.

5. Blitz until smooth as possible (caramelised bits won't blitz smooth), scrape into bowl then cool completely.

▪ ICE CREAM MIXTURE:

1. Add condensed milk and vanilla into strawberries. Beat well for 1 1/2 minutes on high to aerate and combine.

2. Place cream in another bowl. Use electric be**er to beat into stiff peaks - about 3 minutes on high.

3. Add a dollop of cream into the strawberry mixture. Fold through gently, don't beat in furiously (see video for technique). When mostly mixed through, add another dollop and for through about 5 times.

4. Tip strawberry mixture into the cream bowl. Gently fold through until it's a uniform pink colour - about 15 to 20 folds max. Some streaks is ok.

▪ FREEZING & SERVING:

1. Pour mixture into a container (preferably glass with airtight lid), smooth top.

2. Place sheet of baking paper on surface and press out air bubbles (stops icicles forming). Cover with lid, freeze 12+ hours.

3. Remove from freezer, remove paper. Scoop with ice cream scooper and serve in cones or bowls!

▪ Pasta Salad

▢ 1 pound pasta (such as penne, elbow, fusilli or rotini)

▢ 1 large green bell pepper (chopped)

▢ 1 cup cherry tomatoes (cut in half or quartered)

▢ 8 ounce salami (thickly sliced or cut in small pieces)

▢ 8 ounce bocconcini (mini, or cut in half or quarters if using regular size bocconcini)

▢ ½ medium red onion (finely chopped)

▢ 8 ounce spicy salami (thickly sliced or cut in small pieces)

▢ 8 ounce Monterey Jack cheese (cut in small cubes)

▢ ½ cup Kalamata olives (sliced)

▪ Italian Dressing

▢ 2 cloves garlic (minced)

▢ 2 tablespoons parsley (fresh, chopped)

▢ 2 tablespoons oregano (fresh, chopped (or 1 tbsp dried oregano))

▢ 2 tablespoons basil (fresh, chopped (or 1 tbsp dried basil))

▢ ¼ teaspoon red pepper flakes

▢ ½ cup olive oil

▢ 3 tablespoons white wine vinegar

▢ 2 tablespoons lemon juice

▢ ½ teaspoon salt (or to taste)

▢ 1 teaspoon pepper (or to taste)

🟡 Instructions

1. Cook your chosen pasta according to the package instructions, ensuring to salt the water generously. Drain the pasta in a colander without rinsing.

2. In a bowl or jar, combine garlic, parsley, oregano, basil, red pepper flakes, olive oil, white wine vinegar, lemon juice, salt, and pepper. Mix or shake until slightly emulsified.

3. In a large bowl, combine pasta, green bell pepper, cherry tomatoes, both types of salami, bocconcini, red onion, Monterey Jack cheese, and Kalamata olives. Pour the salad dressing over the salad. Toss to coat evenly, and chill in the fridge for at least an hour before serving. This allows the flavors to meld for an even tastier result.

🟠 Instructions

1. Preheat air fryer to 320°F/ 160°C.

2. Roll pizza dough into 6-7 inch rounds, or a size that will fit in your air fryer basket.

3. Place pizza bases into air fryer and pre-bake for 3-4 minutes until firm [Note 3].

4. Spread a layer of pizza sauce onto each pizza base. Add your desired toppings to the pizza, and top with shredded mozzarella.

5. Place pizza in air fryer basket and air fry at 360°F/ 180°C for 10-12 minutes or until cheese starts to bubble [Notes 3, 4].

▢ 8 ounces pasta uncooked, such as rigatoni, shells, rotini, penne

▢ 12 slices bacon cooked and crumbled up

▢ 2 cups chicken cooked and chopped

▢ 1 cup cherry tomatoes halved

▢ 1 cup cheddar cheese cut in ½-inch cubes

▢ 2 stalks celery chopped

▢ 1 medium green bell pepper chopped

▢ 1 cup Ranch dressing

🟡 Instructions

1. Bring a large pot of salted water to boil. Add the pasta and cook for 10 to 12 minutes or until the pasta is al-dente. Drain and rinse with cold water.

2. Add the pasta to a large bowl followed by the rest of the ingredients including the dressing. Toss well until everything is evenly coated.

◾ tips & notes:

1. Salt your pasta water. Think salty like the sea. This is how you add flavor to the bland noodles. You want the pasta to absorb some of the salt as it cooks.

2. Don’t overcook the pasta. Pasta used in cold salads really needs to be al dente so it doesn’t get mushy when tossed with other ingredients and dressing.

3. Rinse the pasta. Don’t forget to rinse the pasta in cold water to stop the cooking process. You never want to add cold vegetables or cheese to hot pasta to make a cold salad. It can both wilt and melt them.

4. Don’t add salt. First, make the chicken and pasta salad and then season if needed. However, the bacon, cheese, cooked chicken, and ranch all have salt, so the salad likely won’t need any added.

5. Chicken club pasta salad will keep in the fridge for up to 5 days in an airtight container. Yet, this is a dish that does not freeze well. Yet, it’s not a big deal because it’s even better the next day and makes a fantastic lunch!

🟠 Ingredients

▢ 2 tablespoons butter

▢ 3 cloves garlic, chopped

▢ 1/4 cup hot sauce (or to taste)

▢ 1/4 cup Worcestershire sauce

▢ 1/3 cup beer, wine or broth

▢ 2 tablespoons lemon juice (~1/2 lemon)

▢ 2 teaspoons creole seasoning

▢ 1/2 teaspoon ground black pepper

▢ 1 pound shrimp, peeled and deveined *

▢ 2 tablespoons butter, chilled and cut into 1/2 inch pieces

▢ salt to taste

🟠 Directions

1. Melt the butter in a pan over medium-high heat, add the garlic, saute until fragrant, about 30 seconds, add the hot sauce, Worcestershire sauce, beer, lemon juice, creole seasoning and pepper, bring to a simmer and cook until the sauce is reduced by half, about 5-7 minutes.

2. Add the shrimp and cook until cooked through, about 2-3 minutes per side depending on the size of the shrimp.

3. Reduce the heat to medium-low, stir in the chilled butter until it melts, season with salt to taste and enjoy with french bread to soak up all of that tasty sauce!

▢ 3 tablespoons butter

▢ 1/2 cup onion finely diced

▢ 1/2 cup celery finely diced

▢ 1 green bell pepper finely diced

▢ 2 teaspoons garlic minced

▢ 1 tablespoon all purpose flour

▢ 14 1/2 ounce can diced tomatoes do not drain

▢ 8 ounce can tomato sauce

▢ 1 cup seafood or chicken broth

▢ 1 bay leaf

▢ 1 teaspoon salt

▢ 1/4 teaspoon black pepper

▢ 2 teaspoons Cajun seasoning

▢ 1 1/2 teaspoons Worcestershire sauce

▢ 2 teaspoons hot sauce or to taste

▢ 1 1/2 pounds medium to large shrimp

▢ 1/4 cup green onions sliced, plus more for garnish if desired

▢ 2 tablespoons fresh parsley chopped, plus more for garnish if desired

▢ steamed white rice for serving

🟠 Instructions

1. Melt the butter in a large pot over medium heat.

2. Add the onion, bell pepper and celery to the pot. Cook for 5-6 minutes, stirring occasionally, until vegetables are tender.

3. Add the garlic and cook for 30 seconds. Add the flour and cook for 1 minute, stirring constantly.

4. Stir in the tomatoes, tomato sauce, broth, bay leaf, salt, pepper, Cajun seasoning, Worcestershire sauce and hot sauce.

5. Bring the mixture to a simmer. Cook for 20 minutes, stirring occasionally, or until sauce has started to thicken.

▢ 1 ¼ cup all purpose flour

▢ ¼ cup granulated sugar

▢ 1 heaping teaspoon baking powder

▢ 1 level teaspoon baking soda

▢ 1/8 teaspoon salt

▢ 1 ¼ cup buttermilk

▢ 1 egg

▢ ¼ cup oil (any oil will work, my favorite is avocado oil), plus more oil for the griddle/skillet

▢ 1 teaspoon vanilla extract

🟠 Instructions

1. In a large bowl, mix the dry ingredients together, the flour, sugar, baking powder, baking soda and salt.

2. Whisk the wet ingredients, the buttermilk, egg, oil and vanilla extract together. Whisk the dry ingredients (flour, sugar, baking powder, baking soda, salt) in a large mixing bowl.

3. Make a well in the center of the dry ingredients and pour in the wet ingredients.

4. Whisk together just until combined. Do not overmix. It’s ok if there are a few lumps lefts.

5. Using an ice cream scoop or ¼ cup measuring cup, pour onto heated, oiled griddle or skillet.

6. Flip the pancakes when there is an even distribution of bubbles on the surface of the pancake and edges are dry.
