Kitchen Victories with Thermomix "Eat food. Not too much. Mostly plants." Michael Pollan, Food Rules, an eater's manual. To that I'd add: "Cook from scratch. Make it easier with a Thermomix."

Ok, not that catchy, but can't think of a better way of describing what this page (me) is about. I'm a London based mum of two and a Cordon Bleu trained cook. I also own a Thermomix and give Thermomix Cooking Experiences that hope to give ideas on how to achieve all of the above, mostly the eating (real) food without ta fuss. Trying out the brand new, absolutely amazing Thermomix Cutter. Swipe to see how it grates the Parmesan - an improvement over the previous grating in bowl method in my opinion.

KV tips - do slice thinly the onions after slicing thickly your celery as they go in together and #2 I’d add cannellini beans at the end instead of the pasta and cook the carrots and cabbage with freshly boiled water (plus stock cube and spices) to shave 8/10 mins of cooking.

Delicious with lots of pepper, olive oil and Parmesan

Happy New Year strangers! Coming back from self imposed insta exile to bring you some Thermomix veggie dishes for this January.

Lots of news; new, amazing, insane accessory, new not so amazing interest rate for which we have a brilliant short lived deal atm.

In the meantime, I leave you with a properly delicious ✨Thai Green vegetarian curry with roasted lemongrass rice✨ which is easily scalable and could feed a crowd. And it’s delicious in a gentle, comforting, easy way (not a punchy middle of Bangkok streets way)

When you have just enough ingredients to follow a recipe

✨Black rice bowl with chicken and mushroom (gut health) ✨

(except that is salmon with edamame 😌)

Please please please go and make it tonight; it’s easy, delicious, good for your gut and easily doubled or trippled for a night in with your girlfriends.

Tweaks

- erm, you can use salmon instead of chicken and bake in oven instead of pan - easier and you can fit more than in a pan - start with bottom side up and flip half way through. Top grill the last few mins.

- and edamame and/or bok choi instead of broccolini (steam for less time). You can fill all the Varoma with veg and steam at the same time as the rice - add after 10 mins.

- easily quadruple the sauce

- up to 350g of black rice in steaming basket - use speed 5 instead of speed 4

Monday morning pastries - one I wouldn’t recommend you make 😅
Let me explain - I followed sweet dough recipe and filled half with cinnamon and half with chocolate. They are brilliant and tender even the following morning, which is rare, but that’s because they have a long fermentation period (as it should be).

But even if you use a Thermomix and save time and cleaning - the weighing, the heating to the right temperature the milk and egg mixture so the yeast activates quickly etc… it’s still all a bit of a faff.

The cookidoo kanelbullars (swipe) are easier and for the easiest of all, the now famous Estonian Kringle which takes no time (but has to be eaten right after baking).

I like this one (swipe for photo) - it has a few more ingredients and one more step but the flavour is 🙌

If you have a heavy hand with 🌶 like me lately, add a swirl of coconut milk or yoghurt

Great as a stand alone meal (with the Quick flatbreads?) or as part of a curry feast as it can be easily made ahead.

This one is for the non purists, no walnut, no raisins, just carrot, spices and a hint of orange. The icing has white choc which helps the consistency (and flavour imo).

I’M ALIVE. And I’ll be kicking off the ‘back to posting’ posts with one of my favourite things in the world ✨choux✨.

Everything in the picture has been made with the Thermomix; the choux, the craquelin and the chocolate crème pâtissière. You can also make the caramel but I did it in a pan for dipping easiness - shhh.

AND I’ll be in the Restaurant Show at Olympia until 1pm today - imagine how useful is for a restaurant or cafe to have any chef (even the stagier!) make batches of any of these things in minutes. Time + money saved ✅✅

Happy Epiphany Day. A traditional (well, 2!)✨Roscón de Reyes✨ that we started having yesterday with hot chocolate and will have for breakfast this morning when the children open their kings’ presents.
Aeons ago when I was a child, this was the only time presents would arrive, on top of camels to the apartment at the top of a building where I use to live. Shoes were left near a good landing spot and food and milk for the animals and the three wise men. Magic camels and magic time.
Recipe by insanely talented from her brilliant course (still available and in both Spanish and English). Very long fermentation which has resulted in the softest longest lasting most delicious Roscones I’ve ever made. Every superlative is necessary. Everything she does is also magic.

Thank you for the inspo! Have made this fish curry before and is brilliant but never thought to make it with leftovers, everyone loved it.
Added turkey in bowl instead of fish in Varoma and the rest was the same. Using the new Thermomix Friend (if you haven’t heard, let me know, is brilliant), made everything even easier than usual.

A secular ✨Tarta de Santiago✨ (St James’ tart).
If you’ve been to Spain you may have seen this tart - it’s as inescapable as is delicious - round, with lots of icing sugar and the shape of St James’ cross on top. It’s silly (nostalgic) but I’d usually print a template and go about recreating this childhood tart. You, of course, don’t need to but if you do make this, it’s always more fun with some shape on top.
This cookidoo version is super easy in a rustic way. I think I like it better with an almond a bit more ground and with the egg whites beaten separately and folded into the mixture. It’s such a simple tart that this step doesn’t complicate it in excess.
And it’s GLUTEN FREE.

One of the best things your Thermomix can make is curry paste. I always try to have some in the freezer - green Thai, tikka - for a quick supper. Better than shop bought, much fresher and better value.
KV tip. Unless you use brown rice I’d take the rice (and green veg) at 13 mins.

The ‘cake’ I always make when the children want something sweet and plain. It’s soft and delicious, this one is made with milk but often I use yoghurt.
It looks like nothing but it’s everything. In Alicante it’s called ✨Coca Boba✨, Silly cake?, because it’s so easy too make and you’ll find it in every bakery, with or without almonds.
Grind 🔸300g sugar* 20s speed 10.
Add 🔸4 strips of lemon or orange rind and grind 20 more seconds speed 10.
Add 🔸3 eggs and whisk 3 mins at 37C speed 5
Add 🔸250g milk and 🔸250g of sunflower (or light olive) oil and mix 10 sec speed 5
Add 🔸400g self raising flour and mix 10 sec speed 3. Finish mixing with spatula
Pour into 30x20cm tin, sprinkle with sugar and bake for 30 min in a 180C preheated oven.
Check for doneness and add a few more mins if necessary
