Day 3 of Taste of Summer 🌞
Today I made a delicious beef and chicken schnitzel with a twist—marinated in yoghurt, tomato sauce, and spices for extra flavor and tenderness. Crispy on the outside, juicy on the inside… absolutely irresistible!

In this delicious episode, we dive into the traditional South Sudanese dish of dry fish with okra​⁠
Join me as I explore the vibrant flavors and unique cooking techniques that make this meal a staple in South Sudanese cuisine.

Ingredients
1 pack of dry fish
1 onion
200g sliced fresh or frozen okra
¼ tsp bicarbonate of soda
Stock
Spices: cumin, coriander, black pepper
Minced garlic
½ tsp salt
3 cups of water
½ cup water for okra cooking

Instructions
Unplait the fish, soak in boiling water for 15 minutes, then wash thoroughly with hot water.
Use scissors to cut the fish into small pieces then wash.
In a saucepan, add the washed dry fish, onions, water, stock and salt.
Bring to a boil and simmer for 20-30 minutes.
Check that the fish is cooked then add the spices, garlic and check the salt.
Meanwhile, add water to okra then bring to a boil and simmer for 5 minutes. Add bicarbonate of soda, mix well then dimmer for 2 minutes then blend.
Add the blended okra to the fish soup then leave to cook for 5 minutes.
Serve with Kisra/flatbread or Assida/Fofo

Sourdough puff puff
Crispy outside, fluffy inside... and NO yeast needed!
Ingredients
1 cup plain flour
1 cup wholemeal flour
½ teaspoon salt
2 cups of cold water
500ml of oil for deep frying
Kitchen towels to drain the oil
For serving
Icing sugar
Golden syrup and fruit compote
Honey
Chocolate

Instructions
1. Mix the batter
In a bowi, combine sourdough starter, flour, salt, and gradually add water until you get a thick, stretchy batter.
2. Rest the batter
Cover and leave in a warm place for 2-3 hours
(it should look bubbly and slightly risen).
3. Heat the oil
Medium heat — not too hot or they'll burn outside and stay raw inside.
4. Fry
Scoop small portions using your hand or spoon and drop into oil.
Fry until golden brown, turning occasionally.
5. Remove and drain on paper towel.
Dust with sugar or serve with honey or yoghurt

Today, I celebrated my birthday in the most meaningful way—by cooking one of my favourite South Sudanese dishes, tamaleka with akelø (handmade couscous) 🇸🇸✨

There’s something so special about preparing the food that raised you. Every bite carries memories, love, and a deep connection to home 🥹❤️

Grateful for another year of life, good health, and the ability to keep my culture alive through food.
